If you don’t like meal prepping (I also don’t) then prep ingredients for meals instead. Clean and chop up produce/greens in ways that will keep best in the fridge, make rice or easy sides in advance, make make a couple chicken breasts or whatever meat you want in advance then season it when youre ready to make a meal. You don’t want to prep too much, especially as a person living alone. When you prep ingredients, it makes it easier to cook because the prep work is already done and you get a fresh meal in minutes instead of reheating leftovers.

I work approximately 72 hours a week and doing this saves me so much time (getting through 3-5 days of meals all at once instead of one at a time in the morning) and money (not buying fast/prepackaged food), while also making sure I actually eat something!!

Yes, this is a great tip. I learned from someone with a large family. They bought in bulk and then paired everything in freezer bags. So now I buy my protein and season it according to diff meals I like and then freeze them in single portions. I buy the 90 second rice packs (not the best option) but it reduces waste. And then for fresh produce I buy what know I can eat within a few days and pre cutting helps so much and makes me more likely to eat it bc it's "prepared"

I swear all your vlogs just speak to my soul. I'm a couple years younger than you but I'm in the same headspace of wanting to be kinder to my body but not having the energy to really invest in the logistics of healthy eating. People make meal prepping look so easy, but it's hard to prioritize that while navigating through the fog of depression and just... life as it is. I'm in university too and a caregiver. I want to reframe it all too. Eating well and working out isn't my effort to lose weight, but I just want to use those acts as a visible attempt to give love to the thing that keeps me going.

Loved this video! I had a bad habit of eating out and wasting the produce I bought so in march i did a whole no eating out challenge (no buying takeout, pastries from my favorite bakery, coffees, none of it) and it really forced me to get in the habit of cooking. I went from someone who didn’t know how to cook to learning how to. Heck I even took up baking and I’m really good at seeing what’s in the house and making meals out of it. We are midway through April and I still prefer to cook and make my own meals. A salad tip: I love chopping up bell peppers in the beginning of the week and roasting chickpeas and adding it to my salads throughout the week. My salads usually are : bed of lettuce, chopped bell peppers, cucumbers, roasted chickpeas (I season with cumin), chopped walnuts, raisins and feta cheese + homemade balsamic dressing. It’s sooo good and easy to put together

She got these overnight oat recipes that hits and they are super easy to make. No cooking required. Maybe focusing on nailing a breakfast meal first then think of a super easy lunch and then later add dinner. I had to start that way because I HATE cooking.

I am sooooo with you on the whole "cooking for myself while living alone" thing. It's really hard. There's a lot of value in using packaged food as a base for a square meal, e.g., add a can of tuna and a cup of frozen peas to your annie's naturals, now you have carbs, protein and fibre. it's hard though, and as long as you're fed you're doing great 🥰

The teaspoon/tablespoon second-guessing gets me EVERY TIME. For so long I hated being in the kitchen because it felt like such a chore... but eventually, something in my brain switched because I found joy in CREATING something. Even with mistakes, I'm that much more likely to enjoy my meal because I made it. And I was so seasoning-blind (as in, not knowing what goes with what) but honestly pairing it back to salt/pepper/garlic powder just gave me the fundamentals to eventually feel more comfortable experimenting. So keep at it!! You'll get there! 💕

I’ve eaten so much frozen bag foods the past two years. My husband and I both have been in school full time since 2021, and when I’m tired, stressed, and burnt out, the last thing I wanna do is spend 1.5 hours prepping/making/cleaning up from a meal. So I am SO thankful for Trader Joe’s and their frozen Asian food selection for getting us through those trying times. I graduate in two weeks and I’m really looking forward to having more energy to make healthier meals, and maybe meal prepping-we’ll see. 😜

What helps me with cooking bow because I hated it as an kids because my mom would force me to cook for everyone in the house and whenever I wanted to try a new receipe and made it well. She would always critique it and take over it. Not only that the food would never last! 😅lol so gorl I feel you.
I started living alone and would cook one pan meals and give myself a week or two to mass order take out and freeze it so I would take that responsibility off of myself. Cuz your right, life is hard. And most of the time we really want less responsibility so food tends to feel more like a chore than a treat lol

Serious warning, though, getting into baking from scratch and cooking at home more has the potential effect of making one into a food snob. Ever since I started cooking more meals--Indian, Thai, (authentic) Mexican, Greek, pasta sauce from fresh tomatoes, homemade tatziki, AND baking 😢 Most fast casual restaurants I'm just "I could've stayed home and made better". I even make my own spice blends now. I didn't realize the rabbit hole I'd fall down in an effort to save coin.😂

When it comes to leafy greens it's more so the temperature and having sensitive teeth. I'm horrible at cooking with recipes and have trust issues at times when it comes to following recipes especially now that everyone with a spatula, heavy cream, onion/lemon pepper seasoning thinks they're a chef. Working with what you have is so beneficial because it teaches you in being creative with what you already have so in the future you already know you can make three easy and quick dishes out of x amount of groceries in the fridge. Isa Rae once said broke-ness is the best when it comes to creativity and getting things done.

You should try cowboy caviar!! Bell peppers, chickpea, cannellini beans, black beans, feta, lime juice, lemon juice, honey. I mix it in a large bowl and it’s a super quick meal to make when you’re too lazy to make anything. It’s been one of my go to’s since I stopped buying meat bc I either don’t cook it right or it goes bad before I can eat it for one person haha

If you don’t end up using your spring mix in a timely fashion, I usually freeze it & toss it into a smoothie later. 🥬 Also yeah my jaw gets tired when eating salad so I chop my greens down smaller to make it easier to chew, just a rough chop, nothing super fancy or uniform. YES to fresh herbs in salad!!! It makes it taste fresher somehow lol. Lastly, you should checkout this podcast called Maintenance Phase-the way you were talking about the US food system made me think of it!

Girl make rice and keep it in the fridge! I always have rice in the fridge, sometimes I make beans to go with it and a fried egg. Sometimes I eat rice and some grilled chicken on the side. You can make a pico de gallo and have it over rice. The options are endless.

Asian veggies like bok choy with soy sauce are usually easier for me to down (well any veggies that are sauted in soy sauce are haha). Not sure if you enjoy crunchier veggie texture, but softer veggies always taste more yummy for me.

i swear the secret to cooking is just buying frozen already cooked stuff so you can make meals in like 20mins. i love these curry chicken frozen meals i get from costco for this reason. just reheat and serve with pasta !!
