If you want to be mold free you have to pasteurize the substratum and wood log in a pressure cooker for 1 hour to kill bacteria and fungus. because dirt is naturally contaminated, Alternatively you can put them in an oven, if you do not wish to use water. Bleach also fills fungus but will not be good for the spider. Look for a mushroom cultivation video, for substratum pasteurization. Good Luck!

Do you have springtails and/or isopods in there? If not, get some. They will definitely help with any mold issues and will help keep the enclosure clean.
I had isopods but totally forgot about them. The substrate dried out and they died lol. but it's fine because Balfouris don't require damp substrate. Gonna keep this one dry from now and (hopefully) we shouldn't experience mold growth.

I had a mould outbreak in my crested geckos vivarium 😪 I didn’t notice it because he has this weird little log thing with loads of branches for him to sit on which is also a hide, the mould started under the hide so I didn’t see it at first and I found it when it had gotten quite bad, it’s horrible being an owner and finding mould in their enclosures

I just got mold in my GBB's enclosure and it's so annoying. I definitely think ventillation was the issue but I think the chunky substrate is also not a great idea in your case
Honestly I felt really bad for you. It must be a lot of work to fix her house thing and she's probably really sad that all of her webbing had to be destroyed for her safety :(

An idea - if you spread the sub into a thin layer and leave over night it would dry out easier
You could also have put the substrate in the oven on lowest heat setting. Sunlight (UV component esp) is good though.

For the enclosure, you should create a tiny sign that says "I bolt on my human because he needs the exercise." XD
Don’t use coco fibre. It gets moldy very quickly. Use peat and earth. I’ve never had mold using it.

Also, I use a blow dryer and shallow layers to get wet substrate to a dry level if needed
