In this episode of In the Kitchen with Matt I will show you how to make no bake peanut butter cookies. This recipe for no bake peanut butter cookies is easy to make using only 6 every day ingredients. Do you have a craving for something with peanut butter in them? Ingredients:
1 3/4 cups of white granulated sugar (350g)
1/2 cup of milk (1%, 2%, Whole, etc.) (125ml)
1/2 cup of unsalted butter (115g)
3/4 cup of peanut butter (190g)
1 tsp. vanilla extract (5ml)
3 1/4 cups of old fashioned or quick oats (295g)
Tools:
Pot
Wooden spoon or Silicone Spoon
silicone mat or parchment paper
sheet pan or cookie sheet

i did these and the choc pnut butter ones, i really like the choc pnut butter ones. i admit i had a hard time with the oatmeal and my dentures so the send time i made them i did pulse the oatmeal a bit on the Cuisinart and it helped. it was in a bit too long almost made a flour texture, but all the old foogeys liked them. tasted like pnut butter cups, what a hit!!!

@@mjkay8660 Try this: Ingredient list
¾ cup salted butter (12 Tablespoons)
1 ¾ cups of sugar
⅔ cup milk
1 teaspoon vanilla extract
1 small box of instant vanilla pudding
3 ½ cups of quick oats
Heat up the first three ingredients until it starts to boil and let it boil for about 1 minute. Using medium heat. Then add the vanilla extract and oats and cook and stir for about 30 seconds. Then add the vanilla pudding mix. And remove from the heat.

Lovely Matt , Thankyou , clever idea useing stuff we all have at home . I like adding milk in that's unusual , then the oats . Well I made them , but I made mine tiny , about half the size of yours and I made mine square , I just tapped the sides with a straight edge . Look good , Taste Very Good Thanks very much .

Hey Matt. Have you experimented with this recipe and substituted something else like rice crispy for the oatmeal? Just wondering how that may work out.
I haven't but that just might work, or cheerios. Although I am thinking the oatmeal helps absorb the liquid, which in turn helps it set. I will need to experiment in the future for sure! :)
@@inthekitchenwithmatt -Yeah, you are probably right. I didn't think of the moisture aspect. It would take some tinkering around with to make it right... Maybe some cornstarch and / or some chocolate chips or butterscotch chips.... Okay I need to stop thinking about cookies for tonight. I got the munchies now. Lol
Yeah some cornstarch might help for sure. It would be fun to get the crunchiness of the rice krispie in there for sure. who knows maybe it will set up just fine like with classic rice krispie treats. mmmm chocolate chips...lol

Me, too! And oatmeal, and I also add a handful of coconut and chopped pecans.
My mom used to make these but she used honey instead of van.extract. She called them preacher cookies.
Oh yeah I think she added a a pinch of salt as well.
Used to love them with milk during Saturday morning cartoons.

I know this video is old but me and my brothers got bored and wanted a snack, do we HAVE to use the vanilla extract?
The vanilla is optional, it just adds flavor.
I tried to follow this recipe today. The taste is great but the only problem is it’s to soft even after placed for hours in a refrigerator. Any suggestions?

If i dont keep these peanut butter oatmeal cookies in the refrigerator how many days can it last? Will it get spoiled if i dont keep it in the refrigerator?
They will last probably about a week in a sealed back or Tupperware on the counter. Unless they get eaten before then! :)

Good luck. I have a good friend who has lots of pain and had prescribed canna butter or something like that, I made rice krispie treats for her with it spread on top. She loved them! No quite the same, but I imagine it will work with this recipe too.

I have a terrible intollerance for milk. I wonder if water will do just fine. I grew up thinking it was compulsory to use milk for beautiful creamy mashed potatoes but when I substituted water for milk, they came out just as creamy (mind you, I used a lot of butter) 😁
You could try water or almond milk with these. :)

One more question please if you know the answer. IF a recipe calls for light corn syrup but I don't have any, Can I make a simple syrup and thicken it up, to be similar in thickness would it be okay to use that in a pinch...or NO??????

I was trying to make this recipe and I have oatmeal but not oats and my oatmeal is made with cinnamon inside of it can it still work
You can always try it, but it won't work as well.

Are you talking about quaker instant oatmeal in the single serving packages ? If so they will work but you need to measure out the oatmeal so you know how many cups you have became this recipe needs almost 4 cups of oats , I would guess that you would probably half this recipe, you will have to do the math , also the cookies are got to be much sweeter because there's sugar in the instant oatmeal packets , okay well I hope this works out for you .
IMO they are really good and well worth a trip to the store to pick up some oats , you can get a large store brand container of oats for under 4 dollars and it is enough to make 2 batches if you measure exactly.

I went to the link to get the ingredient amounts and saw that when you showed what to cook over heat did not have the Butter in it , might want to fix that

Hi Carolyn, I haven't tried this recipe with anything other than sugar. But you can try it with honey or splenda or something like that. Yes you can leave the vanilla extract out, it just adds extra flavor. :)
How many cookies does the recipe make?
20 to 24 cookies or more depending on the size you make them.

You probably can, I haven't tried it. But you could mix them in right after adding the oats. If you add them before they may melt. The oats will help cool down the mixture. Even then, they still might melt on you. Give it a shot! :) Even if they do melt they will still taste yummy.

I read that a humid day is not a good time to make fudge or some kinds of cookies.
Very true, the humidity can prevent the fudge from setting, not always, but it does happen.

@@inthekitchenwithmatt Hmm... First of all, thank you very much for responding. Not many content creators on youtube do that. See, the thing is, I used old fashioned oats and it takes me about 5 minutes to properly cook them on stove. I dont doubt it would work with instant oats but you mentioned in the ingredients old fashioned oats as well, so that is what I am asking about. I guess I should have made it clear from the beginning. I like the recipe but I am just not sure if it would work with rolled oats. Maybe i will just buy a packet of instant oats and try it with that.
@@wrongturnVfor You are welcome! :) It works with both! These cookies aren't meant to have an oatmeal consistency. Meaning the oats aren't supposed to be cooked all the way through. kind of like granola bars, the oats aren't cooked all the way. If that makes sense? I encourage you to try it with both kinds. The recipe is super easy and not many ingredients.

Yes. That bowl it is in is really small. Things appear bigger on camera.

Looks like more than 1.75 cups of sugar
Camera makes things look larger than they are. That is indeed 1 3/4 cups of sugar.
That is more like 4 c. Sugar
Don't tell me what it is and isn't. Were you here when I measured it? The bowl is close to the camera which makes it appear larger than it actually is. And you obviously haven't measured with American Standard cups. You have to use actual American Standard measuring cups. You can't just use any cup to measure ingredients.
