This cookie recipe I make a lot. I grew up on a small farm in Arkansas. Our church was small and our preacher was part time. We feed his family on the weekend and my Mom really loved it! Such a stressful experience at 1:00 am but it was totally worth it. I'm a bake-aholic and I like to bake 24/7 this was the first thing I baked that started my journey, i almost couldn't even stand up because of my tiredness yet I still proceeded and made them. It was quite delicious but it was so exhausting.
These are great, I've made them a couple times. Additions of Honey roasted peanuts and flake sea salt on top are pretty wonderful. I wouldn't eat these every day, just for holidays or to give as a gift to the peanut butter lover in your life.
You can use sugar substitute sweetie. I made a homemade from scratch coffee cake for a neighbor who is diabetic. And I love sugar. But you can do it without. Never stop dreaming about cookies!
A sugar substitute may work, though I’d consult a professional with that, but there’s a bunch of good peanut butter recipes out there for diabetics (When I was a caretaker for my grandpa, I learned a few recipes for him to enjoy)
Ok im borderline diabetic why are u watching this videos if u cant have this? Look up diabetic friendly recipes instead of torturing yourself, just saying ❤
I followed recipe to the letter. I even used a candy thermometer as you suggested. After I scooped them out on a pan I pushed them down just a little and they crumbled all to pieces. I still are some and were teal good. What holds them together?

The butter and sugar cook together to that temp to hold them together. Can you let me know what kind of oats, peanut butter, and butter you used?
Same for me it was so dry I couldn’t get them to form a cookie. I’m at 5300 ft elevation would that affect them.
Can I replace Honey for sugar???
I don't think they will set properly with honey
When u scoop it's very solid. But what's in the pan is runny?
It gets more solid as it cools
