  • Marry Me Chicken
    2 chicken breasts cut into cutlets
    2 TBSPS Butter
    2 TBSPS olive oil
    6 TBSPS flour
    1/3 cup sundried tomatoes in olive oil - chopped
    3 large cloves of garlic chopped
    ½ cup parmesan cheese grated
    1 cup chicken stock
    1 cup whipping cream
    ¼ tsp oregano
    ¼ tsp thyme
    1 tsp chili flakes - optional for a little heat
    Salt and pepper
    Basil leaves torn
    Cut the chicken breasts in half to make 4 cutlets and then season with salt and pepper and dredge in the flour. Shake off any additional flour. Into a pan that you have melted the butter and added the olive oil add the chicken cutlets and cook on each side 3 to 4 minutes. Once the chicken breasts are cooked remove to a plate and add the chopped garlic to the pan and cook for about one minute before adding the chicken stock. Then add the sundried tomatoes and the herbs and using your spatula scrap up the little bits off the bottom of the pan. Add the whipping cream and the parmesan cheese and stir well. Add the chicken back to the pan and let cook on low for about 6 to 8 minutes.
    Serve over pasta, rice or mashed potatoes.

    For heaven’s sake. Is there anything people won’t complain about? Your videos are great. If pan sizzle and friendly chatting offends people they can adjust the volume on their devices. Please don’t change a thing Colleen.

    YOU ARE NOT CHATTING TOO MUCH! Just because they have an attention span of a worm. They can fast forward on their own. Don't change A THING! The pace and cadence is sublime! Keep doing what you are doing❤🫶🏽👍❣️🫂💯 It would be no different if you were learning with your aunt or mom. If I ever told my mom to cut the chatter and hurry up..... no home training😮‍💨

    Your videos are just right. The chatting is nice. The frying pan wasn't overly noisy after all it's a cooking video. I really enjoy that you cook in real time and rustic food is the tastiest.

    I’ve been making a similar recipe for a few years now and the only major difference is I add a couple of handfuls of spinach and cook till wilted. Soooo yummy!!

    We've been married 55 years this coming May. I just write a Valentine Card and my husband buys one, that's about it. Maybe I'll make your chicken, it looks delicious, or hubby can get Chinese.     I love the aromas and sounds of cooking, and the feel of it as well! The sensory aspects of food are so important. ❤That sizzle!
    I agree with others that you do what you have been doing. One point - there was a section in the video where I stopped being able to hear you, and had to turn up the volume pretty high. But no big deal. Not everyone has to deal with mics on their shirt and all the associated details! Like someone else said, it is a kitchen of your friend making dinner, haha! You wouldn’t complain to them- you would lean in🥰

    It looks delicious!! I’m a widow but I will try this with the chicken thighs ( dark meat is my favorite) thanks for teaching us new foods from your kitchen.

    I canned a recipe for ‘Burritos’
    you can the ingredients but not rice, cheese or anything we are not supposed to can with. And can it. So when you’re done canning you dump the contents of your canned ‘burrito’ in a pan with either instant-rice or previously prepared rice and cook to eliminate the extra fluids in the dish, when it thickens some, put some on a flour tortilla with rice and your cheese, roll it up and you didn’t need to go by a fast food place for your supper, you saved lots of time and $. Thanks for you showing us how you can and encouraging us to do so.
    2 days ago I made a copy cat recipe for Texas Road House Dinner Rolls. I used your method of the bread machine Using the ‘dough cycle’ and followed their directions for the rest. They turned out Great!! I took some to my neighbors also. Thank you for encouraging us to use the dough cycle with our bread machines!
    Well I’m off to Bible Study. Thank you for all that you do.
    Yes the frying is a little loud, but we don’t mind. This is cooking and we hear those noises when we cook as well. Please continue to make the same videos, you are our friend and we wish you well in your adventures. I am a subscriber.

    Hi Colleen, love this recipe you've made. Will be making it this Sunday! As far as the front noise and chatter, I LOVE IT! You're such a dear heart to even consider trying to please everyone, but negative people will NEVER be pleased. They'll just continue to find something else complain about. We all need to say a little pray for them to find happiness, somewhere in their hearts. On a lighter note, my granddaughter (10 years old) and I made your cinnamon buns from your bread machine dough recipe on Monday. My husband said they were the best cinnamon rolls he had ever eaten! And that's saying something. He's a sweet freak!😂 We ALL loved them! Thank you so much for wanting to bring my bread machine out of the closet and start using your bread machine dough recipes! My granddaughter and I have decided we'll be making pizza dough the next time she comes to spend the night with Mima and Papa! Colleen, you keep being you! You are WONDERFUL!!!!

    do you wash your chicken or meats before cooking? It iss controversial, but following proper meat handling is really important easpecially for new cooks

      Honestly, I seldom wash meat before I cook it. If it looked slimy or discolored I would probably look further but I know that the meat is cut and packed in government inspected facilities so I accept that it has been properly handled.

      I think I need to get a mic but that also means upgrading my camera to accept the mic and a new camera is thousands of dollars.

    Just a bit freaked about you handling all the spice containers with “raw chicken fingers”…..then you used the tongs on the chicken(one side totally raw)THEN using the tongs to stick inside the sun dried tomato jar is just beyond anything I’ve seen by a cook on RUclips . cross contamination is sooooooo dangerous…..especially raw meat! I would have expected someone your age to know better……I hope some young person watching doesn’t watch this and think it’s ok 😞😞😞😡😡😡😡😡

      My kitchen, has hot running water and soap and I sure don't put anything away until it is thoroughly cleaned. I feel like recording me cleaning my spice containers, knives and cutting board wouldn't be something that most people wouldn't want to see. Thanks for watching. Cheers, Colleen

      I keep sanitizing wipes in the kitchen to wipe down everything when handling meat
