Sir, mixing of idly/dosa batter by hand is one of the toughest job. The more the batter they beat, the item will be soft & fluffy. Hat’s 🎩 off to the cook. But still they are using aluminium vessels & non-stick idly plates. The should invest for brass/ bronze vessels. For idly Kora cloth is best.
