    Wings in my Air Fryer are fantastic! Seem like too much trouble on the griddle. I love the "flats" and you like the "drums", a match made in wing heaven! I had a friend in high school who only liked the frosting on the cake and I only liked the cake and not the frosting! So 1 piece of cake at lunchtime between the two of us, was perfect!

    Flats are best. I just bought a turkey fryer for wings. They were great, and the mess was minimal. I started them in unheated oil and I was able to make a ton of wings at once.

    My family's favorite wings come off the kettle grill with a Vortex.
    I don't think the griddle will replace those.
    But I appreciate the video.
    I haven't had a quiet meal to myself in 4 years.
    I also found it easier to just cook the wings whole and pull them apart when I eat them.

      That's a good idea about cooking them whole I've never tried that. I just got my dad the vortex for Christmas for his Webber. I hope he likes it , it got great reviews online.

      Yup, for something so simple, the Vortex ( two sides for different uses ) works surprisingly well. Good to spray oil on the wings while cooking to crisp them up.
      My daughter likes the flats. I usually use one of those mini-hatchet things to chop through the wings.
      Use the wide side of the Votex to put a nice sear on things, but I had to do one porkchop at a time the other day when reverse searing cause I did chicken thighs ( dripping with juice when finished ) and then the porkchops.
      Your dad will love the Vortex. The sound and imagined smell of those wings searing in that sauce was awesome. I would probably get some Szechuan sauce if I was going to griddle some wings. I always break out my giant level when I try to set set up my grill with my griddle insert. Good thing I am quick and ambidextrous. :-)

    I've never been much of a wing man. Probably won't start with this griddle recipe but I did thoroughly enjoy the video. The time you spend with your son at his age is priceless. The time you don't spend with him will forever haunt you. It looks and sounds like to me, you have this figured out. Cheers, my friend!

    I can not wait until spring to get my Blackstone 17” griddle -bbq combo fired up, to start doing wings.

    Yeah, I've tried wings on my griddle a few times, but wasn't impressed. I prefer them fried, sauce them up and then charred on my grill. As far as flat or drums, flats come 1st and then drums, but if there are only drums, I'm just as happy, cause I'm eating winds, lol. Oh, I would of given that instigator the OLE DUSTY ELBOW, LOL HEY, how are those T-shirts coming, lol. Merry Christmas and GRIDDLE ON DUDE.

    So Flats first of all but I'd never turn down a drummie neither.... If I have a mess of wings to make (that's two and a half bunches) and I'm starting off with frozen (I know - - gasp) - I'll use the Ninja Foodi pressure cook then they get air fried - about the time they start to pick up color and get crispy I'll drop them in a large bowl and sauce them (though not to the "wet" point) then they go on the griddle for a couple minutes on each side - back in the sauce.
    Years ago (before they were bought by some fast food company) BW3's would put their sauced wings on the grill ala Ricky Bobby Style - my wings aren't quite as good because they don't start out deep fried but they are a fraction of the price and usually take about the same time as you can order them and then wait when you pick them up....

      I'd never turn down any wing either my friend lol. I still need to get me an air fryer. I hear good things about those, especially for wings. Ricky Bobby Style lol I've never heard it called that. Your method sounds pretty darn good my friend. And like you said I'm sure it's a lot cheaper.

    Another great video, Johnny! Off the topic quick question: I'm ready to buy a griddle but I want natural gas. None of the major griddle companies sell a kit ready-made for NG. Some offer conversion kits. Thoughts? Ideas? And once again, thank you for not only the great griddling recipes and ideas, but for the comedy relief as well!!

      Hey sorry for the delayed response. I saw your other comment as well. Did you get the griddle yet? I am not aware of any ready made NG griddles other than really high end ones in the couple thousand dollar range. People have told me that they did the conversion and don't think it's too difficult. I would go that route.

    Great video Johnny! I did this the other weekend, practically identical steps. I fully agree the smoker is the way to go, BUT: If it;s rainy, you want wings, and your griddle is high/dry in the garage... I'll take it. I mean its wings, wings fall into my bacon wrapped "whatever" category.... There good no matter what.

    I recommend that you boil or steam your wings first. This will help render some fat in the skin to make them crispier. Also, toss the wings in baking powder along with the salt before they go in the refrigerator overnight. You can use a free plastic grocery store bag for the tossing. The baking powder needs to be in direct contact with the skin to do its magic (it probably needs some time too) and I’m not sure that you’re giving the BP a fair chance by tossing it in with the sauce minutes before going on the grill. Also, if you cut the wing tips off, it will make it easier to eat the meat on the flats, unless you like gnawing on bones. I use my thumb and forefinger on both hand to shove the skin and meat down about half an inch to break everything clear of the bone, repeat on the other end and then slide the meat off the bones. There’s definitely one direction to slide the meat off that works best (I believe it’s down from the end that was attached to the drumette down towards the end that was attached to the wing tip). Let me know if anything is unclear. If so, I might be able to find a video. This technique is awesome because all of the meats comes off in three, simple, quick steps.

    Wing joints like Hooters & BWW cut the tip off wings because it creates additional square inches of surface to cover in sauce & for the quantity of wings they move, that can add up to gallons of extra sauce pretty quick.

    i put a bit of liquid smoke in with my sauce and cook it some in a big metal bowl on the griddle before tossing

    When I have wings with my friends, they always want the flats. I don't care because the sauce is the most important part. Oh, and beer. 🍺
    Edit: I forgot, the most important thing for me is that the skin is crispy. I've had wings with the greatest sauce, but they were slimy and awful.

    Another superb video amigo! Really enjoyed seeing your co-star in this one! Some great humor, playing with it, Stevie wonder, Polaroid, etc. You’re on top of your game. I like flats best I guess, but drums are just as good. Am I the only one who sometimes cooks regular chicken drum sticks like wings?? That’s become a Super Bowl tradition for me.       You are NOT the only one DRUMMING! My local store sells 10 LB drums for $10 (basically $2 LB for meat after bone loss). I spread my drums on a wire rack, salt & season lightly, refrigerate overnight, "cold smoke" (stainless steel HEX tube from AMAZON) on the gas grill for 2 hours & then light it up! I prefer to smoke 'em, sauce 'em & grill 'em so the sauce is nice & sticky, but I typically end up sharing w/ my roommate who can't handle SPICY, so we use a few different plates for 3~4 "dipping" sauces vs tossed sauce.

    I smoke or deep fry them, then sauce and put in the griddle for char. A restaurant in town called it Daytona style

    I have made wings a few times on the indoor griddle and cooked them at 400 degrees to get color and char but they came out good.

    Flats are favorite, but I'm not fussy about my wings. You don't look old enough to know anything about shake it like a Polaroid picture. I love the real life commentary and not editing everything out. Yes, you tooted is priceless in the middle of describing your griddle wings!
