Great Recipe Andy, as always! What I do with my chicken when I make Butter Chicken, I marinade the chicken for 24 hours then give it a nice char over a hot fire for a few minutes. The Char adds a bit of flavor to it as well. YUM YUM
This was probably the best dish I’ve ever made. The cool thing about it was that it’s a chill meal that you can take your time cooking if that makes sense. I’ll most likely make this for Valentine’s Day for my spouse since it was such a hit.
I made this for a dinner party and it was a fantastic hit!.... pushing the sauce through a strainer was the key.... that made this the buttery texture.... delicious

Love how you acknowledged Northern cuisine from southern cuisine as there's a big difference between the two. Most people will treat Northern cuisine as Indian cuisine especially butter chicken when it's not even an Indian creation. So many great lost recipes which truly define Indian cuisine never see the light of day.
Butter chicken is the best dish and I would like to advice you to put little bit of honey instead of sugar in butter chicken. Just try it and I think you will love it😊

Excellent video. The addition of some dried, crushed fenugreek (kasoori methi) is the only thing missing. That is the spice that gives it the classic butter chicken flavour.

I’ve made recipes before based on RUclips chefs, and at best they’re fine, most of the time they’re fairly mid. This BLEW ME AWAY on the first bite, like immediately, and I’m not even that good a cook. My wife and I and our housemates only complaint is that we were too full to keep eating it! Next level butter chicken. I am always gentle when cooking this dish meaning temp control is very important as is having patience. Take your time like Andy says. Also get the best spices you can find. It makes a massive difference. Balancing the hot, acid, salt and sweet is a challenge with these dishes, esp for amateur home cooks, and of course depends on your unique tastes. I followed the measurements pretty much exactly to get a base line on my first attempt and then made only a couple of small adjustments on my second attempt. It’s a winner and worth the effort.
Definitely going to try this but with some plant-based yogurt and cream and seitan as I have a family history of Cancer and need to avoid the estrogen in dairy and igf-1 in meat---thanks for posting

An Indian colleague of mine once ordered butter chicken in Paris. I should have tried it then, but I first tasted it in South Ealing, absolutely fantastic. Amazed that in 30 years enjoying Indian cuisine in UK that I had never been recommended it. East London eh? My frequent trips to the Brick Lane bagel shop I may have met you, Andy!

Just made this recipe tonight Andy, didn't use the garlic, chilli or chilli powder as there is spice and allergy considerations in the family. Turned out bloody amazing. Great recipe.
