Wonderful, wonderful, but what amused me the most was that growing up in southwest Louisiana during the 1960's, we had exactly the same model ice cream maker (though much larger), a great big old wooden, barrel really, with the same mechanism, only ours had a few remnants of green paint. The only thing I wouldn't be sure about is the sweetened cream. I've never made home made ice cream before. Is that just cream with sugar added? Maybe you could explain how this is made? What type of cream to use (heavy whipping?) and how much sugar to use for 1 pint?
Mrs Crocombe just adds a bit of sugar to some thick cream to taste. Double cream would work fine for this, but whipping would also do the job. Good luck!
In grade school, we did this with a small coffee can rolled around in a large coffee can. We rolled the large can to another student like a game until the cream in the smaller can was frozen.
We made ice cream at Girl Scout camp one summer. We put the ice cream mix in a ziplock bag and then put that bag, salt, and ice into a bigger ziplock bag. Then we just shook it back and forth with our arms until thick. (Some brave souls even threw their bags at each other in a game!) Knowing how it was done back then is pretty cool. Thank you for the fun and interesting video :D
To everyone wondering cucumber ice cream? Yes cucumbers are not just raw salad items or eye cooler as everyone in the west world deems it to be. There are a limited but good number of desserts prepared in many parts of the world such as cucumber dumplings, cakes, puddings, drinks, & of course ice cream & yet in those same counties, in other parts, you can find some people who are unaware of it & ask the same question as you. Let me tell you that when cucumbers are made into batters & when they are mixed with milk or milk products, they give a very light, sweet & distinct flavour you can't resist once you have it & also it has a special quality of lightness to it which doesn't fill your stomach heavily. But milk shake & ice cream is more popular & a must have. One Cuisine I suggest to refer to, because I'm from there : India (includes Goa , Mangalore (in Karnataka State) ) PS: Don't forget to peel the skin before you use it for cooking, otherwise unwanted bitterness will be introduced.
I love all of these videos, I have been binge watching them and I am amazed how much brandy they used in their recipes. Lol. I agree with everyone else, she needs her very own 30 minute show. Does she have a personal channel?
+FLYINGHANYU1 Oh now, some people look for and are attracted to different qualities in a life partner. Maybe he likes her calm matter of fact way which still results in not boredom but outstanding creations.
These videos are wonderful, and I enjoy them very much; Thank-You so much to everyone involved with the work that goes on which we might not always see!
The ice in Audley End's ice house would have been collected by the staff from nearby rivers and ponds - possibly the River Cam which runs through the grounds. Commercial ice houses also existed, with stock imported from Newfoundland and Alaska.
They cut out blocks of ice during the winter, and buried them in sawdust. though why would they ship ice from Alaska to Great Britain if north-east USA is closer?
Note: Please do not use period-accurate food dyes for this. Scheele’s Green was wildly popular during this time period. Also wildly toxic. Sacrifice the historical accuracy to avoid consuming Arsenic.
I think they should use it if they decide to make cucumber ice cream, maybe it will make them say, wow should make cucumber ice cream. The rest of the world is like you don’t think.
I wonder what the green food coloring was. I know Paris Green was a popular dye for much of the Victorian period and even used in candies, but I hope for the sake of Lord and Lady Braybrooke that it was something else.
Sadly probably not. Paris green was an extremely popular color along with Scheele's Green appearing in everything from cake decorations and sweets to dresses and wallpaper. a lot of people got sick or died from the arsenic. Hell they published the recipe for those dyes in the 1820s and they kept using them til the early 20th century.
Having watched lots of other videos describing victorian and edwardian life I guess the green food coloring was something that shortened the lifes of the house owners a few years.
APH Munich I don’t like cucumber, but many people here eat it a lot, specially during summer, with some lime juice and chili powder/sauce (the sweet variety: chamoy). Probably people would like it, and because is sweet... yeah, maybe.
Yeah it will be delicious 😋 I've tasted cucumber juice from out school's canteen and it was delicious!😀 Cucumber has a fresh flavor which does go well with sweets (✪ω✪)
Good question! Sythentic food colouring was used for the first time in Victorian England. Mercury sulphide was used for red, lead chromate was used for yellow, copper sulphate and copper arsenite were used for blue and green. Before this, many natural foods such as beetroot were used to colour dishes.

Sounds like a similar technique, Carol! And fun too.
I remeber doing that in my school.
That sounds like fun!
me: i'd like some chocolate ice cream
mrs crocombe: *HOLD MY CUCUMBER*
wait wut
If only I had a dollar for every time I ended up in the HR department, for yelling that exact same thing at people....
Miku Hatsune that's cool

One Cuisine I suggest to refer to, because I'm from there : India (includes Goa , Mangalore (in Karnataka State) )
PS: Don't forget to peel the skin before you use it for cooking, otherwise unwanted bitterness will be introduced.
Kira Nobles to think you can make a lot of dishes out from cucumber when my sister just peel it and eat it raw while walking around the house.
Good information thanks
You can find out more about how the Victorians stored ice and kept their desserts cool here: bit.ly/2uE7oXN
I love your channel!

Why you Victorian put brandy in everything.you Victorian have very dark history
i reckon this would taste a bit like Cucumber lemonade (without the lemonade bit). My college sell Cucumber lemonade and its really good.
Jhona Batil what is your profile pic from?

I love all of these videos, I have been binge watching them and I am amazed how much brandy they used in their recipes. Lol. I agree with everyone else, she needs her very own 30 minute show. Does she have a personal channel?
Lol I agree, we watched her for hours last night. I love watching her cook and talk. 😆😆
Now I really want to try cucumber ice cream
I make my own icecream on occasion and I'm definitely going to give this flavour a try!
When you wanna watch a cooking show and history at the same time:
RUclips Recommends: hey kid wanna know how to make Ice Cream the Victorian Way?
Me: *not a single cooking bone in my body* BOY DO I
What a happy lordship lol. Always some type of alcohol in every dish. 🥴
What I have concluded watching this series is they boiled/steamed most things and added alcohol to as many things as possible.
Please, my sweet and humble lady, marry me.

Oh now, some people look for and are attracted to different qualities in a life partner. Maybe he likes her calm matter of fact way which still results in not boredom but outstanding creations.
+FLYINGHANYU1
interesting opinion. Yes, at least you were working at not being tradrionally sexist - but you did think right off he was.
+FLYINGHANYU1
I'm sorry if you have experienced observing that and admire that you don't condone it.
These videos are wonderful, and I enjoy them very much; Thank-You so much to everyone involved with the work that goes on which we might not always see!
In the Victorian era, where did "the ice house" get the ice from?
The ice in Audley End's ice house would have been collected by the staff from nearby rivers and ponds - possibly the River Cam which runs through the grounds. Commercial ice houses also existed, with stock imported from Newfoundland and Alaska.
English Heritage Fine, thanks. I thought they bought it from Iceland. 😀
They cut out blocks of ice during the winter, and buried them in sawdust. though why would they ship ice from Alaska to Great Britain if north-east USA is closer?
Scotland is cold af and it's only a couple days walk
Cup o' Joe *greenland
this feels like an episode of downton abbey
Sylia Adalin TRUE
Sylia Adalin No it doesn’t
Not really when we think about the era and conditions
Note: Please do not use period-accurate food dyes for this. Scheele’s Green was wildly popular during this time period. Also wildly toxic. Sacrifice the historical accuracy to avoid consuming Arsenic.
no
lmao
I think they should use it if they decide to make cucumber ice cream, maybe it will make them say, wow should make cucumber ice cream. The rest of the world is like you don’t think.
Yes, i watched a documentary on this!
When I saw the green dye I shivered. XD
“What flavor of ice cream would you like ma’am?”

Definitely going to try cucumber ice-cream: sounds refreshing.
M Munroe It does.
Nobody:
Me at 3 a.m: Im gonna make ice cream, victorian ice cream~
Me too
Having watched lots of other videos describing victorian and edwardian life I guess the green food coloring was something that shortened the lifes of the house owners a few years.

APH Munich I don’t like cucumber, but many people here eat it a lot, specially during summer, with some lime juice and chili powder/sauce (the sweet variety: chamoy).
Probably people would like it, and because is sweet... yeah, maybe.
Yeah it will be delicious 😋
I've tasted cucumber juice from out school's canteen and it was delicious!😀
Cucumber has a fresh flavor which does go well with sweets
(✪ω✪)
That sounds SUPER refreshing. I wonder how this would be with a bit of mint, cooked in the syrup with the cucumber. :D
OMG I'M LOVING THIS.
This is my newest favorite RUclips channel
Is anyone just binge watching these videos???
It’s like ASMR but better
What did the Victorian cooks use as food coloring?
Good question! Sythentic food colouring was used for the first time in Victorian England. Mercury sulphide was used for red, lead chromate was used for yellow, copper sulphate and copper arsenite were used for blue and green. Before this, many natural foods such as beetroot were used to colour dishes.
+English Heritage aren't those ingredients poisonous
Yes, but you also need to take into account that the Victorians used cocaine for toothaches lol.
So is that why pink was one of the only food colourings prior to the Victorian era?
Arsenic was used to make everything green, including sweets so probably that.
