Just off on settings -gesture -navigation
GO TO ADDITIONAL SETTINGS AND CLICK ON GESTURE SHORTCUTS , YOU WILL FIND IT

There is literally nothing that lets you turn it off. What your video shows is not there. I searched the entire settings.

I seen it, but Google assistant keeps popping up like an old 80s pop up add still. It's in order 1-4: Profile Picture, Settings, General, then Toggle Off.

Doesn't work, Google keeps pushing by harassing me to turn it on every 30 seconds 24 hours a day snd now they're getting more hursh demanding i turn on the assistant with bigger alerts, its bloody awful which i have it turned now for iver a year and its getting worse and worse

It likely does turn it off. There also specifically an option to turn off the "hey google" feature.
In any case, it makes no sense running a listener service when there are no apps subscribing to it.
You can disable it.
It doesn't work anyway. Google has stopped checking their developer email for assistant. They abandoned it.

Even after doing this, My phone still keeps coming up with "your Google assistant is ready to help you" and then a button to turn it on every time I long press on my headphone button (to adjust volume). Really annoying
I have locked my tablet in a drawer, I only wanted it as a photo album but google messes with my shots, them, makes suggestions, wipes my carefully created easy-to-find albums. I hate it. Taken all the fun out of my photography. I can work round google on my phone and ignore it.

To stop the nagging ...
Open "Settings" > Apps & Notifications > advanced > Default Apps > Digital Assistant App > default digital assistant app > select "none"
This works on my Android 11 / Pixel 2.

This is no longer accurate. You may as well delete the video and it's simply not accurate and just adds to the frustration of this all

Does NOT work on Cricket Icon 3 Android. I have already done the above BUT Google Assistant refuses to turn OFF. It just keeps going blah-blah-blah. A real pain in the rear. By the way - >I< have to use TWO fingers to do what used to take just ONE finger. Why? Because that's how Google Assistant mucks you up! Ideas on how to get rid of it? Really need it!

for everyone that is still showing up the assistant, just go to settings, gestures and turn off the option for tapping the power button as the google assistant button

What about if every night when i go to bed it pops up with "turn on google assistant" on the bottom of my screen? Its TURNED off but still does this shit when i plug my phone in with my headphones.

Did that. It's still coming up. Whenever I am using my wirless headphones the assistant pops up. It is annoying.
I found how to stop it from popping up when shutting my phone off! Go to your phone's settings, not google settings. Go to Extra settings = Shortcut for gestures = Starting Google Assistent with the on/off button? = click this and toggle off.
I wish people would give better directions ... good luck using yours. Please do better.

These are good steps to find it, but it doesn't stop it from popping up when I want to shut off my phone. It suddenly started showing up when I want to shut off my phone a few weeks ago and it freaked me out.

For everyone struggling i used google assistant and said "deactivate Google assistant" and it popped a window that i could toggle to deactivate but i don't know if it does stop it from listening too.

For everyone still having prompts after disabling all options, check the adapter to your phone, mine was loose which lead to constant prompts.... your welcome in advance ☺️
It's not really that simple since it still asks me to turn Google Assistant back on whenever in put in my earbuds
Im here cuz everytime I try to change tracks via Bluetooth buds the assistant interferes. (Dont buy Raycons) I wonder if Apple users have to deal with this.

For those still having trouble, don't follow the video, follow the caption coz its quite confusing. He didn't show that after you click google assistant you have to scroll down and click on general. He said to do it but skipped the screenshot of going there that's why many people got confused. In the video he said "click google assistant AND GENERAL and toggle off Google assistant" but he only showed going to google assistant followed by the toggle.

I toggle it off and it just starts nagging to be turned back on. One notable time is basically every time I connect some wireless earbuds.

It doesn't work. Listening to anything through earphones is impossible. I need to stop it from interfering completely.
So this doesn't fix the problem. To be able to restore the ability to restart or turn off your phone you need to go to settings, system, gestures, press and hold power button. Then disable Google assistant here. *SLAPS RUclips GUY* You're welcome.
I am using asus Zenfone, u inspired me to change the phone setting > default digital assistant app > remove google.

Even though we toggle the Google assistant option under settings of Google profile, it still appears on pressing the power button for 0.5s.
Try disabling this gesture through main settings on phone. So it's Phone Settings>Additional Settings>Gesture Shortcuts>Enable or Disable Google Assistant.
