The only issues I could foresee with this is that if there's potentially copyrighted music before the gameplay, you won't be able to monetize either part, while just gameplay might work for you; and that youtube's algorithm apparently looks at total watchtime in a video when pushing it (as far as I'm aware, others may correct me if it's not the case anymore). So if people may only watch one part or the other and not the entirety of the video, it might get suggested less to new people.
For Twitch, it's probably great, I would just consider if splitting the video in two would work better with the stupid ways in which youtube works.

I like the "more casual" on-stream approach.
Only small issue that could arise is finding your review of a Specific OST through search imo.
Like, if I looked for "old composer reacts elden ring godskin", I wouldn't be able to find, that this video exists via youtube search.
Maybe a link to the OST in the description + the name of the track would help for the algorithm.

Also, I believe for both Godskin Apostles and another song you haven't listened to, yet (Mohg, Lord of Blood) the composers indeed just used gibberish, what you heard there was a two-stage fight, that's why it paused for a moment.

Lichdragon Fortissax next from Elden Ring, I always recommend it because most players won't have heard the phase 2 which is a dramatic shift in tone, bombastic, organs, it's insane! Great stuff I watch all your videos, might need to get twitch for the live streams!

Godskin Apostles show up together and separately several times throughout the game. I don't know the exact lore, but they're some crazy dudes that go around killing gods, skinning them, and wearing said skins. The weapons they carry are Godskin Peeler and Godskin Stitcher.
I think it might be a macabre joke because the player is going around killing gods and wearing their clothes, too.

FromSoftware games' choirs are always either "ooo" or in Latin, but they never release the lyrics, because although they're thematically connected to the game and specific situation, the details of the narrative change up to the last moments of the game's development whereas the soundtrack is set in stone a bit earlier, meaning the lyrics may contain outdated information and throw people off track if officially released (or they may give away more explicit information than FromSoft wants, since they're ALSO known to remove canonical info over the last period of development and even after release to make the puzzle harder). Also, there's a high chance the Latin is bad :)

as far as the idea of things "sounding the same" i always think... its kind of context. if youve never heard bach and beethoven(or even any orchestral music if you havent heard a lot of it) before you might feel like they both sound the same to you, but if you know them they seem pretty different. ive had a lot of experience where i listen to a band for the first time and i think "all their songs sound similar" because they might have a similar vibe or whatever their style is but once you get to know the songs you think " how did i ever think these sounded the same'?" you just hear some similar sound or instrumentation used in a certain idiom and at first youve got no real reference for it its just like " this band sounds like this" or "this composer sounds like this" and then as you get more granular into it you sort of hear all the nuances and the different melodies and dynamics and things and really its another world at that point.

To answer your question about languages: Originally they were going to use Latin for the chorus, but the devs decided against that because they wanted the language to be completely alien and foreign to Earth. So while this is an actual chorus singing actual lines, I think from the Czech Republic, the words they're saying are effectively gibberish. Sorry to bring it down a notch, but those are the facts.
