    This week, I've been enjoying a similar Signatory HP 21 (distilled 1991, bottled 2013). Matured in a sherry butt that yielded 687 bottles. Cask 15123 (not listed in WhiskyBase). 46%, non-chill-filtered. HP12 reaches the limits of my desirable sweetness/sherry range, so I've been reluctant to try the older HPs, assuming they'd be sherry monsters. Based on that, the shop owner intelligently recommended this bottle. This must have been a weak cask because this is not HP sweet at all, but instead the smokey peaty element of HP has flipped the tables and become dominant over the sherry. It's a subtle dram and many would be disappointed if they're expecting the HP sweetness to have increased with age, but I'm finding it to be an enjoyable and unique view into the standard HP12 profile.

    Nice information.
    I had an AD Ratray Indie Bottling last year and although it was at cask strength, 16yo as I remember having been a fan of HP12 for years I found myself digging deep for those HP signature notes.
    I thought it was a completle different animal altogether. HP12yo is still my favorite bottling. (then "maybe" the 18)

    Hi Ralfy! This review means much to me! I've been to Edradour in September 2013 and tried this whisky at their bar and was absolutely convinced. I bought a bottle and now here's your review - makes it even more special to me. Thanks a lot!

    Superb revue as always. Informative and entertaining at the same time. I'm new to whiskey. Just started with the Highland Park 12 year old. I know I'll have to try the Signatory 20 year old next!

    May pop up for a visit to that distillery sometime soon, as Pitlochry isn't that far from me, and I was up there for the Enchanted Forest last year.
    Enjoying a cask strength 12yo Sprinbank just now, but I am beginning out in this and was pleased to hear Ralfy say at the end of the vid about it taking time to develop your nose and taste to all the different subtleties in whisky. With this dram I'm enjoying it but maybe it is a bit complex for me just now, but it was going reasonably cheap so went for it to experience a fully rounded complex malt.
    For my second and final dram of the night, I'll be having a HP 12 as I'm really enjoying that as a whisky that you could take ages trying to uncover all the different noses and flavours; and also its great as an easy-going drink as well when you just want to relax.

    Yeah, all of these Signatory HPs from '91 are spectacular; I've had two of them myself. Looking forward to your Edradour review; I've always had trouble with that lighter, fruity/mineraly "Central Highlands" profile (also in Blair Athol, Glengoyne, etc.), which I find very tough to nail down. So maybe you can make me a convert.

      Also, I know you get way too many whisky recommendations, but let me throw one more on the pile: peated Bladnoch. There's a ten year old out right now and, trust me, it's your sort of thing. I'd describe it as a halfway point between Ardmore and Linlithgow, if that makes sense. Springbank, but not. I'd be shocked if you thought it was anything less than an 89-90.

    Try using water filled into the glass botlles and do avoid the plastic ones (they usually tastes plastically awfull and, importantly, could contain some very nasty chemicals primarily because of the plastic coat).

    One of my first single malts was 10 yo Edradour. It was not fascinating but, well at least for me, a very good and informative "starting point" into the wonderfull SM universe.. Bye.

    Can you tell us if we have this rite ...please.
    what you are basically saying is that Highland Park outsources their new-make to all those Indy bottlers and depending on the Indies inclinations, its put it in either Sherry/Bourbon casks accordingly??
    Also should the environmental/location of the maturation have profound effects on the end product since its warehoused somewhere other than Orkney??
    Is this most of the Independent Bottlers modus operandi ?!

    Wanted to ask you about your opinion about Bushmils Single Malt Whisky, I resently finished bottle of 10 year old and bought a bottle of 16 year old Tree wood Single Malt and I was really impresed with the complecsity of the spirit...Most of the time I drink Scoth Single malts ,but I have seen your reviw for Tarconelly Irish Single Malt and you gave it really good marks ... Please tell me if you can , what you think about it. Thanks in advance , love your vlog.

    If they don't empty a butt in a bottling, then surely oxidization of the remaining spirit would be a problem?

      not really, oxidisation is not as drastic as some experts will tell you.

    always wondered why they don't "rotate" or even "gently shake up" whisky every year or so during the maturation? Wouldn't this extremely help speed up the aging process? or would it have some sort of detrimental effect? Ive seen barrel keeps walk around smacking barrels with a stick to kind of "loosen" and cause a touch of turbulence in the cask but never seen a distillery actually shake them up or rotate them or even spin them a bit...im sure its been tried anyone know why its not a common practice? Just cost issues or laziness?

    Hi Ralfy, in Sweden Highland Park sells a cask strength version with no age specification in a half bottle only, price around 33 EUR, have you tried this?

    Do you have any thoughts on spirit aerators? Me and my dad have tried a Vinturi Aerator and really enjoyed the flavor it seems to bring out immediately. Do you have any opinions or do you use one your self?

    Hey Ralfy, long time smurf just made a channel to comment to your excellent work and say thank you and give you some appreciation for your VLOGS.
    Wanted to ask this at your Glenfarclas Video from before, but was too lazy to make such a stupid "channel" to comment =).
    As the Glenfarclas you reviewed is not available in Germany, would you recommend any other. The 10 YO or 12 YO, is there a big difference. And the 105 Bottle does it have a better quality? A Shame the 15 YO is not in my budget at the moment, tasted it in a bar last week, I found it godly...

    You've been to many distillerys!
    Do you know if any distilleys use a "thumper" barell/kettle between the heat/wash and the worm??...it appeares that a few US stillhouses are now incorporating this center condensation tank (per Appalachian Mt. teknique) & its beginning to take hold.
    What it does I believe up the %Abv of the low wines as it arrives thru the worm & said to increase the % to near cask strength.
    Have you seen/read anything of the like?? It'd be interesting to know.

    Ralfy, I thought Port Pipes were bigger than Sherry butts and are also used for whisky maturation. True or is this a misconception?

      port pipes can bigger than some sherry casks, but generally butts are biggest for whisky.

    I have had Glenfiddich as my first purchase, Highland Park 12 second, and Laphroaig QC as my third. Where should I go from here? I was thinking Lagavulin 16, Highland Park 18, or something else (Christmas gift I can only choose one bottle).

      Dan, if you liked the HP12, the HP18 is a richer, smoother expression and you can do a vertical comparison, which is fun. If you liked the Laphroaig, might I suggest Ardbeg Corryvreckan or Uigeadail. They're both very well reviewed expressions that I, personally, think are more complex than the Lagavulin 16.

    Can a distilry use octavs or 1/4casks exclusivly 4say 12yrs and indeed call it a 12yo? or by law must they 1st b maturd in th mor comun hoggies n butz usin th smallr ones 4 th 2nd matration?
