It is my understanding that frozen peas are flash steamed before they are frozen. If you cook them, they will turn to absolute mush and the flavour will be compromised. For those that hate peas because they are mushy and tasteless, this (plus a lack of seasoning) may be why: they have been sadly cooked to death by your parents growing up. I would follow all of the steps, except for when he throws his shucked peas into the saucepan. They are raw, so they need to be cooked. For frozen peas, I would rinse them under cool (not cold) water to thaw, drain, and add them in the last minute of the sauce cooking before you blitz it. They really only need to heat through, or they lose their delicious pop (and since you’re not blending all of them, it would be good to keep their texture). Then proceed as directed. Frozen peas can have a bit of a “freezer taste” to them, so I do recommend rinsing to thaw. I personally really love frozen petit pois, though of course the size difference will affect the texture experience (it might be a little less satisfying depending on who you are). But I love petit pois for their sweetness. Happy cooking!

this pea dish reminds me of a classic my dad used to make simply coined " chicken n patatahhs" its a linguine dish though thats the thing, you bake chicken legs and thighs with the standard Italian seasonings with a punch of peeled potatos, then when they are almost done you through in a few cans of peas, boil your linguine mix it all together and serve with parmigiano and butter ontop. have you ever had anything like that, my pops is from Brooklyn and born in 1951 grew up in nyc through the 70s
We loved peas as kids, my grandmother and an uncle had huge gardens with peas, strawberries. At Grandma's she tried using us as cheap child labor, problem is we ate more than we put in the pot. 😜😂

@@aragorn1ring blending hot things in a blender is highly dangerous, especially when it’s one you can’t off-gas like his (because it’s a nutribullet. The blades are affixed to the lid, so you can’t open it like a traditional one). I would imagine this is maybe why, but I don’t know.
