      Mary, I am plant based, but some of your videos really got me inspired to make lots of new veggie powders. Recently I ended out in the ICU for almost a week, really seriously sick with sepsis (severe blood poisoning infection) as well as a serious (new) allergy to penicillin. It is amazing how much a couple of weeks of serious illness can set you back... When I came back home, I was offered a lot of help/care, but I prefer managing as much as I can on my own, and I found that my veggie powders has been a Godsend to turn to, both to ensure that I get a decent amount of nutrients to recover on while being without energy to do real cooking, but also to add the good flavor to make you eat even if you have no appetite whatsoever. I have even, when not at all feeling like eating, just cooked some whole grain pasta and soaked the powders with a little vegan liquid butter (or oil) and water and added some homemade low calory (sugar free) BBQ sauce on the side. It is soooo good, really delicious. even if it is a less than 10 minute meal and it doesn’t really look very fancy! ☺️ I especially love the carrot-, leek-, celery and tomato powders - and I add some veggie bouillon powder too, to balance flavors and add a little salt. It is just soooo good! I haven’t tried yet, but I thought I should buy some packs of frozen spinach to dehydrate and powder too, so I easily can add some dark greens to such meals too. Initially I was worried that adding such powders would make the pasta «gritty», but it really does not bother me at all, it gets nice and soft, I think. So delicious! My very favorite is the carrot powder. OMG, it is just sooo yummy, especially when balanced with a little salty bouillon or spice mixes! I recently made some quick gravy (or sauce?), a light, creamy vegan one for some Swedish (un)meatballs, but was a bit quick and the veggie powders i added, clumped up a bit. So I ended out passing through a sieve and I got the most smooth and flavorful sauce ever. OMG, it was soooo good and I wouldn’t be surprised if most of the nutrients were in the sauce rather than in the lumps I got rid of.... Would love it if you would experiment and figure out more vegan options of your food. E.g. a great vegan ranch mix, made from scratch at home... Thanks a lot! 👏👍😊❣️

    I've been struggling with depression and isolation anxiety and between my new meds, and your videos, I'm grateful. I joined your channel and I'm watching your different series and I'm learning so much. I'm an unschooling mom and I've been a stay at home mom for 20 years. Definitely not traditional, but I try my hardest. Thank you so much for everything you have taught me in the past week. ❤

    Mary, there is something so endearing about your presentations. I come to the kitchen late in life (I’m 72) and wish I had watched my mother as she cooked.     Thank you so much for mentioning to people about the expiration date. I have told my niece so many times things do not go bad from 12:00 to 12:01. Haha.
    My grandmother used to mix her leftover spices from the previous year with the spices from the new year she made. So they always tastes wonderful to us
    I always grow what I can because you never know how truly old the spices are because they are preserved with radiation.

    One very handy thing I've found is that the shaker top on grated paresan or romano cheese in the cylinders fits exactly on either those smaller canning jars, or on the small topped mason jars. That would be a VERY handy top for some of these seasoning blends! Thanks for this video, Mary.

    Mary!! I can attest that simple Italian seasoning blend you share here makes the BEST EASY HOMEMADE 🍝 Spaghetti sauce!! Perfecto!❤
    Oh and my 11 year old son LOVES your homemade ranch even more than store bought!! He told me that store stuff is “mid” - that’s Gen Alpha slang for “sub par” lol 😂

      You can "save " the lids from the kraft parmesan jars ! they fit regular size canning jars!

    I love how you always offer lots of options. I don't have a funnel and I felt momentarily deflated and then you show me another option using parchment paper and a paper clip. Brilliant and so incredibly helpful. Thank you

    I love making my own seasonings! Today I was making a squash casserole for the freezer. I had squash that needed to be used and it wasn't on the menu for dinner. So bright and early I made the casserole and am letting it cool before freezing it? I might have had some for breakfast; but I digress. Back to seasoning blends. I have a shaker on my table labeled powdered salad. I add it to anything I can get away with, that my hubby can't see. I normally cook my squash and onions and drain them before pouring them in the dish the casserole it is going to be baked it. I was looking at that little bit of nutritious water thinking my freezer soup container is full and thought what if. So I reduced it over high heat until there was barely enough to stir, stirred in a bit of my powdered salad, mixed and poured that over my squash and onions. Finished with the cheese and crumb topping and baked as usual. It was even better 😍

    it's a really good idea to vacuum seal them when you make them or put them in very small mylar bags and seal them up. they will not loose their fragrance or flavor. She has really awesome ideas for expired spice blends here also. I grow a lot of ours and vacuum seal them after drying and they last for many years.

    I love your channel and all of your recipes. your voice is so soothing and reminds me of how my grandma used to speak. especially when it was bedtime for me she would read stories or just tell me stories and because of that soothing voice, I get sleepy. now I listen to you I start to get comfy and it's like ingrained and I get sleepy like when I was little. your smile is contagious. :)

      I love your video's I have been watching your videos since I found your channel. My fiance listen occasionally when I'm watching I love your video on butter, and sour cream etc. I will join your group on fb. Many of the food's I make are Colombian and Puerto Rican since I am mixed. My fiance is from the midwest and I want to make more traditional foods he likes so when I found your channel I love it! Because there are things I didn't know I could make from home so simply. If you have recipes for meat canning? My fiance loves bread and butter pickles it's hard to get something's here in NYC and I like making healthy foods for the family. I am still learning watching your videos I have to make your sourdough starter! It seems so easy thanks to your recipe! I love making bread, I make conchas(mexican sweet bread) and pandebono it's a Colombian cheese bread both take time to make. My family would love fresh bread more often and now I can with the starter thanks to you so thank you so much! I wish I could give you a hug.

    Mary I'm 54 year's old i been making my own mixes and drying my herbs from my gardens for 30 years at least. I've never, Ever had a spice go bad!! The big wigs who say 1 to 3 years are being paid to say that so stupid ppl throw out there spices and buy new!!
    Want to know how I know this.... my grandmother passed in 2000 I cleaned up her Canning and spices and herbs, in that collection of hand Me downs was a garlic salt n herb blend that was my great grandma's who had been dead 20 years. I thought omg this is ancient must be bad I intended to dump it, but when I opened the seal it smelled fine so I tasted it... It was still perfectly fine tasted almost like the day she made it, 20+years before.

      Kim, What I do believe you experienced with that Garlic & Salt mix was the ability of SALT to act as a preservative. I am interested in Mary"s opinion though. .

      Okay---- believe me because I use to be an absolute obsessive nutrition nut when I was a competitive bodybuilder.... OXYGEN is the enemy inside of containers holding foodstuffs. Even if the contents still taste okay the longer the contents sit there WILL BE a decline in nutritive value. That's why preserving food is ABOUT getting rid of the OXYGEN. Fats and oils will slowly. go rancid also once the product is used because OXYGEN has now entered the container.
      This same degrading of quality will also happen in natural care products- more so if homemade.

    I am so glad I found your channel. I love making my own seasonings, My mother always said that when your herbs were older, just put some between two spoons and crush your herbs to bruise them and reactivate them. I have also found putting some between my (clean) palms and rubbing them together well does the same thing and my palms smell wonderful. This helps me know that the herbs are still potent.

    Thank you so much. I love making my own blends, and have a few that I've done. But you have expanded my horizons. BTW: if you use a white paper plate (the cheap kind which are a staple in my kitchen) to gather the ingredients, it becomes its own funnel for pouring into the jars. Also... tarragon: this is one of my favorite flavors. I'm so glad you include it. It's worth the search to find or order on-line. My favorite way to use it is with frozen peas,. In less than 5 minutes I can have them ready. Melt butter and sprinkle in the dried tarragon. Onions can be sautéed with this if desired. Only about 30 seconds is needed to release the tarragon flavor; add the frozen peas. There is usually enough water in the frozen ones to steam them, but a dash or so of water can be added if needed. Let them thaw and heat through with about another minute to cook them and they're ready. Even if one is not a fan of peas, these may change your mind. Again, thank you so much Mary for your time and expertise. I love the detail you add. You are a blessing.🙂

    I need to find a substitute for rosemary, i detest rosemary in any amount but i will definitely make the other blends. Since the amount of sucanat in the barbeque rub wasn't mentioned I'll start with two tablespoons. Since this video is several years old you may not read this but thank you for sharing these wonderful recipes and tips.

    Hi Mary! Thank you so much for making this video! I’m a young mom doing everything I can to stretch the budget while feeding my family healthy meals. I’m learning a lot from you. 💜 I noticed in this video that you mentioned several times about leaving out ingredients if your store does t have them. I just thought I’d mention that my local grocery store will order items if a customer requests them, and I’m sure most stores will do the same. Another option is buying online! I’ve bought several ingredients on Amazon to make some of my recipes! Hopefully this helps someone☺️ Again, thank you for making these very helpful videos! 💜

      Mary's Nest thanks! Yes I’ve seen a few of them! I’ve started making my own bone broth in my instant pot, and my next project is going to be vinegar! I use vinegar to clean my home and I’ve been learning about many uses! The main reason I want to make my own vinegar is so I can avoid all the glyphosate that’s in store bought. Organic vinegar from the store is not in my budget! 😂 I will definitely join your Facebook group! Thank you!

    I would also add 1 tsp sugar to that jar of taco seasoning. It helps soften some of the bitter undertones of those spices.

      I make this all the time. No need for sugar...it’s perfect as is. Otherwise the taco flavour isn’t taco flavour. Ha

    I use a lot of Italian Seasoning. I also use marjoram in many dishes and soups. I never knew the ingredients of Italian seasoning. I cannot eat cumin, now that I know what to put in taco seasoning I can leave the cumin out. So excited about these seasonings!

    Thank you so very much for sharing your seasoning blends. I make my own rub and have become quite famous for it. People always ask if I have any left over to share....blending your own spices is the way to go to get really exceptional taste. I buy most of my spices at an Indian market in bulk. Just walking by that place takes you to far away exotic places. I am now a very big fan of cumin and allspice seeds. Thanks!

    Mary absolutely love your site , you are so sweet and have me fermenting everything ,love it ,I have a question ,about vinegar ,my vinegar gets funny stuff on top ,could you talk about that .Sometimes it’s like a white mold ,or like a little round jelly type thing .Would love to learn more about vinegars .Thanks , love you,and thank you for teaching us so much. .,!

    It’s also possible to find dried buttermilk in the grocery store. You just have to add water to reconstitute it.

      That’s true, but I prefer not to use it because it has been heated at a very high temperature which has damaged the proteins in it. But certainly in a pinch - when you have nothing else - it can be used as a substitute. Love, Mary❤️🤗❤️

    This was so helpful. I am living in Thailand during Covid and have been wanting lemon pepper. However, lemons are very expensive here but limes are abundant and inexpensive. So, I'm going to try making lime pepper. I think it will be lovely on seafood!

    For older open spices I boil them and use as an air fresher. Glad to learn about other uses too. Ah, Mom always knows best.

    This is really great! Thanks so much! As a vegan, I make my own dressings often and sort of guess what to put in so it's better at times than others. I love the idea of having the perfect blend in a jar ready to go!
    We use vegan mayo and some unflavored/unsweetened plant milk that we've curdled ahead of time with a little lemon or lime juice (or apple cider vinegar works, too). It's essential to have ranch dressing with our cauliflower wings!
    I think I will make up some jars of some of the most popular spice blends to give out as presents to fellow vegan friends and family!!

    Omg! Do good made almost all of them. Onion soup mix I made chip dip added three tsp but two for me probably good enough. Ate today with homemade potato chips. Only thing I couldn't make was sour cream. So that's only thing I had to buy. All other ingredients fresh and in pantry. Way it's supposed to be. Love the chance to save money and be at home mother. Keep up good work!
