Not sure if UK measuring cups are different to US cups, but I went to make it with the 1/2 cup + 2 tbsp of butter recommended on the website, and it didn't seem enough. When I added the sugar I kind of got a solid lump! Then I checked your video and saw you had a whole bowlful of butter, looked like the best part of a stick of butter in there. Once I added a bunch more, it looked lovely! I made the crackle version. Yum.

I am so excited to try this recipe. I hate buying the prepackaged mixes. With the COVID crisis, it has become harder and harder to find GF foods. Wanting a fun sweet treat I can eat is impossible to find. I plan on trying in the next few days. So happy to see you back.

Hi! Thanks for asking. I've never tried these in cupcake tins, but I'm sure you could do it. They won't rise like cupcakes though. The benefit would be that you don't have to slice them. :) Let me know how it goes if you get time.
If I would omit the cocoa powder, would it make a nice butterscotch brownies? Or would it be too squishy? Update: I made these without cocoa powder for a delicious butterscotch brownie. I'm dairy free, so I used oil instead of butter, and water instead of milk. Also, I used only brown sugar instead of some white. They were great!
