I had to guess the measurments for the flour, salt, and sugar but I did it and it came out perfect. I used 2 cups of Namaste organic "perfect flour blend," 1/4 cup sugar, and about 1 and 1/2 tablespoons of salt

This was a game changer for my Christmas meal. I made a beautiful cherry pie with the lattice top and it not only was beautiful to look at it was amazing to have a great tasting pie that was not off tasting like so many gluten free things are. I love your recipes! Following a lot of your recipes have brought joy and enthusiasm back to cooking for me. Gluten free is a pain but it doesnt have to be nasty. Thanks for your recipes and I am looking forward to more in the future.
Thank you Nickie! I'm so glad the pie crust was a success for your Christmas meal! I (and my family) taste-test every recipe many times during recipe development (ok, many, many times) before calling it done. It's so important to me that the flavor and texture is just right, because gluten free should be delicious!! I'm glad you're enjoying the recipes...more coming very soon!
I love that you explain why certain things are done. Your explanations are so clear and concise. So far, everything I have made with one of your recipes have been absolutely wonderful. Thank you!

Miss Linda 😍 I keep saying you are the best instructor in gluten free baking your voice I love thanks for this beautiful pie crust which I love pumpkin pies even when it's not holidays. Happy new year to you I hope you and family are ok. I'll be trying this soon. I will come back to let you know how it turns out. Thanks. For such amazing recipes. I'm still baking your amazing white bread.
Hi Vernice!! As always - thank you so much for your sweet comments. I really appreciate you! I hope you are doing well (and Covid free!). We are all well here - thank you for asking. And I agree...a good pie is a good pie, no matter what time of year it is! My favorites are chocolate pudding and apple. My husband would vote pumpkin with you. I hope you enjoy the crust. Please let me know your thoughts when you have time. New recipe coming in a few days :)
Thank you SO much! I can’t wait to use your fantastic sounding recipe along with your pie making tips. My granddaughter can’t have gluten and I like to bake for her.
Hi Mary Jean :) That's so sweet that you bake for your granddaughter. I love that. I don't know her age but it would be fun to teach her how to make the pie crust. Thank you for taking the time to share your thoughts!
Thanks you for this beautiful recipe!! You are such a perfectionist 🥧 It should be mentioned that you only poke holes in a pie crust that you intent to blind bake, like you are here. Otherwise, the holes will create a very soggy bottom crust from the filling (such as apple pie) during baking.
Perfect timing! I currently make an all butter gf crust and had been searching for ways to make it better. The addition of sour cream was in another recipe I have but, I was hesitant to try it. You've convinced me to do it now. Thank you!!!
Hi Angie! Yay for perfect timing! Sour cream, in just the right quantity, is a great addition to certain gf recipes. You won't even know it's there (other than a slight moisture/tenderness boost). I hope you enjoy the pie crust...please let me know your thoughts if you get the chance. And thank you so much for being a long-time subscriber!!

New subscriber! I’m so excited to see what else you have. I’ve been making too many gluten free failures. That tin foil hack was genius. I lived till middle age and still cut out separate long strips for the crust. My common sense is lacking at times. Any reason why you used brown rice and white as opposed to one or the other. I’m trying to learn these flours. Also any good graham cracker recipes?
Hi Tracy! I'm so glad you're enjoying the recipes! I always like to use at least 2 different flours in combination to smooth out flavors. You will notice this in most of my recipes. Funny you mention graham cracker recipes...a recipe with a gf cracker base is next up on my list :) Thanks, and happy baking!!
Hello and thank you for the amazing idea :) That sounds sooo delicious. I haven't tried empanadas yet with this dough but I'm putting it on my list! (And I'm thinking baked).
Hi Patricia - Thanks for your question. I haven't tried this pie crust with a pre-made mix so I can't say what the results would be. It may or may not work. Pre-made mixes are made with different flours in different ratios and some have already added xanthan gum. Because of this I do recommend following the recipe, if possible, for results as you see in the video. I hope your pie crust turns out beautifully :)
Hi! This should be fine for pot pies. The minimal amount of sugar doesn't make it taste sweet. It just balances the flavor a little bit. Thanks for the great question :)
Hi Ron - Thanks for asking this. Yes it can, but as Winnie 2609 said, just be careful to go slowly and watch the dough pieces. No less than pea-sized is ideal. They could even be a little larger. Hope you enjoy the crust!

Can I replace Xanthan gum with something else?
They recommend guar gum. But, you do need some kind of binder or else it won’t hold together. 😉
you can use psyllium husk, but always use about 3 times the quantity of xanthan gum
@@annajankowskanicacio1060 Would you say 3:1 is a standard replacement ratio? Would you use more psyllium for a bread?
