    昨天跟視頻做了,全程手搓粉,今早上當早餐吃,包仍很鬆軟,味道正!只是我誤解了蛋和奶的份量,雖然中途已多加一點粉,麵團仍偏軟,做型較難,立即把香腸切半、劑子份量減半42g, 總算也似模樣,好吃便是成功!真沒想到5年前的視频仍寳刀未老,是實力的表現👍👍!謝 Carmen 分享美食視頻,🙏🙏

    Hi Carmen...wanted to let you know your recipe for sausage bun is by far the best for use with bread machine😊. The dough comes out perfect and not too sticky like some other ones I've used that requires tong zhong😅. I have also used same recipe for 餐包,波羅包…etc and all come out great! Pls keep sharing more recipes😊

    I just baked this yesterday, I cannot believe I made it!It was delicious.I used jhonsonville cheddar beddar because of the kids,otherwise I coulde have used thesame flavor in the video.Thank you so much carmen for sharing this your recipe of sausage roll.

    想請教一下,我跟著step做出來的麵包剛開始很好吃,只是過了幾個小時後就變得有點硬,是什麼地方出問題了嗎?謝謝你的回復

      每人用的麵包機不同,內置的自動程式也不同,這是最基礎適合新手的作法,老化會比較快,最好保存方法是放涼後冷凍起來,吃時回溫返熱,如想保濕更好,要加入各頪麵種,就不是這個配方了

      外界面飽舖用的是豬油吧,不是牛油。豬油會軟身。

    1) 没有豆奶,可以用什么代替呢?
    2) 有食谱建议『后油法』,搅拌成团才放牛油,你觉得哪种好D ?

      1)可以用牛奶或水,份量一樣
      2)後油法是比較好,在其他影片用廚師機有用到後油法,但每人面包機自動程式所需時間不同,下油時間點較難抓準和程現,面包機比較適合新手或懶人

      可以的,注意面包機是否可打這份量,同造型時要快手些,做多三個時間長了,面團不斷發酵緊的。

      湯種應佔主面團(粉加水)百份之20-25, 用了幾多粉和水去煮, 就在主面團中扣除,用機打的面團一定不及廚師機

      Hi 要看環境溫度,第一次發酵大約20-30分鐘不等,不要單靠時間,用面團的狀態來判斷,手指插洞測試 (如不清楚可以打開字幕啊!)。😜😜

      李焯敏 您好,因每個爐不同,先減少時間,在旁邊觀察著,足夠上色後就可以出爐,如很快就上色才調底10度,蛋液:全蛋打散加1匙水和小許砂糖拌勻,過篩後即可用

    不好意思想插過題外話,我看到妳直接把酵母放進麵粉,並沒用酵母格~ 我一直有個問題就是我的酵母格永遠會剩下酵母,沒完全掉進去,但弄出來的方包又很正常;因為我覺得很浪費,就試像妳一樣把酵母直接放進麵粉,但這樣方包就會發不高... 只有放在格才正常... 想請教兩方法會有不同嗎?

      Hi 您好,我的經驗剛好跟你相反,放在格裡反而發不起,有時酵母吃不進麵團裡,但用機器本身的做包程式做麵包就沒問題的,只麵團就不行,可按照你的機器來做就可以,最重要能成功打出面團:)

    Hi Carmen, 我的P仔麵包機麵團模式要一個鐘頭十分鐘,完成第一次發酵,麵團脤大 double以上, 我一早已扣起10g 豆奶和蛋, 麵團還是非常濕,為什麼呢?

      可能同面粉吸水力有關,可扣20克再試到成團爲目標。不用跟足我比出份量。

      Maria Leung T65係面粉灰份含量單位,用來做法包和歐包多,要保持部機不要在太熱的地方,全自動程式完成晒通常都差唔多一小時,現在夏天熱,看著面團變化,夠1-1.5倍大就夠

      I stay in Msia with tropical weather whole year long.
      I make dough follow ingredients you gave exactly but my dough came out WET for 3 times, can you possibly tell what went wrong? The only amendment I did was replaced
      Soy milk to Cow milk.
      Need help badly 😩

    I press the "dough" cycle on the bread machine. I saw your time to be 20 min as at 0:48 on the film. But my bread machine is 1hour 30 mins. How long do the dough sit on the bread machine?

      I use the auto mode , around 1 hour

      @@kswriansjsThank you very much for your reply. I think my time too long 1.5 hr. And also I have the same condition on Anita Kwan. After 1st dough rise, it is too sticky. I put some all purpose flour until not too much sticky. Finally it is good. I really like your show. Thanks.

      salt 6g
      sugar 25g
      small egg + milk/soy milk 185g total
      instant yeast 3.5g
      sausage 6

      每部面包機不一樣,我的是自動搓面到完成第一發,淡豆奶是無糖豆漿,也可用牛奶代替。

    我第一次試做,味道不錯,様子都似模似樣。但為什麼腸仔不黐住麵包,切開就跌出嚟,笑死老公😂😂😂

      好叻呀第一次就成功,腸仔要抺乾,如在雪柜攞出來要先回溫才好包,包時要拉貼啊!

      Carmen, 如果我把所有程序都做完,到放入焗爐的程序,可否將部分未焗麵包放入雪柜,明天才焗可以嗎?thanks

      @@ih43 會發過龍了,要在整形後就要放入雪柜用低溫做二次發酵,雪柜要有足夠空間比整個盤放入,因發二次發酵後不可以移動個包,密封好但保鮮紙不要貼到包,如貼住一撕就爛,回溫後可焗。

      不好意思,我不是這個型號所以不大清楚,但只要是麵團模式就可以,應該每一型號都有這個模式的。
