  • DON'T Waste Bananas NO KNEAD No Milk NO EGG very Tasty & Healthy Banana Bread 香蕉面包,不加鸡蛋,解决烂熟的香蕉好办法, 免揉膜,松软香甜湿润
    Ingredients 配方:
    Dough 面团:
    very ripe bananas 2 (peeled banana 245 g)熟透的香蕉2根 (剥皮后245克)
    sugar 7 g 1/2 tbsp 白糖7克
    all-purpose flour 300 g 2 cups + 1 tbsp 中筋面粉或面包粉或高筋面粉300克
    unsalted butter 20 g 1 tbsp + 1 tsp 无盐黄油20克
    Instant dry yeast 3 g 1 tsp 酵母3克
    vegetable oil 5 ml 1 tsp 植物油(炒菜油)5毫升
    lemon juice 1.25 ml 1/4 tsp 柠檬汁1.25毫升
    pan size 23×33 cm 烤盘尺寸 23×33厘米
    preheat oven & bake at 180℃ / 356 ℉ for 15 minutes or until brownish top
    预热好的烤箱180℃ / 356 ℉ 烤15分钟至表面金黄

    Before you cut and roll the dough could you use a cinnamon sugar sprinkle?? Would that change the texture or baking time?? Theses look so good💗

      I tried the cinnamonand sugar. I mixed about 1/3 c. sugar, and 2 to 3 Tbs. cinnamon with about 4 Tbs of butter (room temp). Then spread it on before I rolled it up. Then cut it like cinnamon rolls. It was a good idea. And I just cooked till golden brown, but it did seem to add about 5 mins. But that might just be my stove or how I cut it.

      是的,香香甜甜很好吃~酵母可以加到4克或5克,这样面团会发酵的快一些,其他不变~

    請問佳寶媽如果要分兩天做是不是前一晚完成第一次發酵後放冰箱,拿出來要回溫幾分鐘才能拿出來整型第二次發酵呢?謝謝你

      前一晚和好麵團後室溫發酵一會,看到麵團有變大,有一倍大的時候,放入冰箱冷藏隔夜繼續發酵,第二天從冰箱取出來,不用等回到室溫,直接整型,(因為整型的時候,就會回到室溫了)第二次發酵即可~~

    Hi Gabaomom, this bananas bread I followed every step you do but when comes to 2nd proofing it doesn’t rise much,why?plse give me your advise, I love baking bread

      some time yeast cannot grow very well in very strong sugar~ your bananas may have more sugar than mine, I guess so~

      草莓味道會有些酸,它比較適合做蛋糕裝飾或慕斯蛋糕等,好像很少用它做麵包的哦~草莓熟了以後可能就不是這麼好看的紅色了~~可以用蘋果代替香蕉如何呢?

      分开应该是面团的筋性很强,稍微有点回缩,面团的松弛时间还可以长一点~

      不揉手套膜并不是面团没有形成手套膜,而是面团自己就会形成手套膜,不用花时间特意去揉出它来,所以,面包一样松软拉丝,晾凉后放入保鲜袋,室温保存一天,第二天吃还是非常松软的,如果二天后吃不完,就放冰箱冷冻,吃的时候自然解冻,小烤箱低温烤一下,非常好吃

    Nihao gabaoma, I have followed all the steps, the cake dough is growing /proof well, but why is the bread baked result so hard and tough? Why put water lemon ? Thank you mom.

      Sorry i mean lemon juice 4 tea spoon, why we need to put in lemon juice? My bread dough is good, but after baked it bread is hard and not flufy. Thank you gaobaoma, god bless.

      1. Put in lemon juice is making more flavor and also helps the dough to be less easy to be oxidized as banana is so sweet and the dough is easy to turn brown in colour.
      2. The bread should be very soft and fluffy as showed in this video if the oven is working well and the second proof is good so.

      @@gabaomomcuisine I see there isn't salt in the recipe, which usually makes yeast doughs fail. Did you mean to add salt, and forget it in the written recipe (and on video)? Mine was tough and not fluffy. I'm remaking today with salt.
