    BETH'S TARTIFLETTE RECIPE
    Serves 8-10

    INGREDIENTS:
    3.5 lbs (1580g) Yukon Gold Potatoes, peeled
    7 slices, thick center cut bacon, sliced into 1 inch strips
    1 ½ cup (350 ml) Gruyere cheese, shredded
    2 cups (300g) yellow onion, sliced into half moons
    ¾ cup (180ml) heavy cream
    ½ cup (120ml) whole milk
    2 garlic cloves, minced
    ½ cup (120ml) dry white wine
    1 ½ tsp (7.5ml) fresh thyme, chopped (separated)
    1 ½ tsp (7.5ml) salt
    1-8oz (230g) wheel of Camembert
    METHOD:
    Boil potatoes until fork tender. Allow to cool.
    Meanwhile, heat a large non-stick skillet on medium high. Cook bacon until crispy. Remove with a slotted spoon and transfer to a plate lined with paper towel to drain.
    Remove all by 1 tbsp. (15ml) of bacon fat from the pan and sauté onions in fat until soft and caramelized. Season to taste with salt and pepper. Add thyme. Set aside to cool.
    Then in a medium-sized bowl combine cream, milk, garlic, wine and salt. Set aside.
    Slice potatoes into ¼ inch (6mm) slices and set aside.
    Grease a 13 x 9 (32cm x 23cm) oval gratin pan. Line pan with one single layer of potato slices, sprinkle a 1/3 cup (80ml) of cooked bacon over the potatoes, 1/3 cup (80 ml) of the Gruyere cheese, 1/3 cup (80 ml) of onions and 1/3 cup (80 ml) of the milk/cream mixture. Repeat this process until you create 3 layers.
    Slice the wheel of cheese horizontally as if cutting a hamburger bun to create a top and bottom. Then cut the wheel into quarters. You will have 8 triangles of cheese.
    Place cheese triangles all over the top of casserole. Sprinkle with remaining ½ tsp of fresh thyme.
    Bake at 400F (200C) for 35-40 mins until cheese has melted and topping is golden brown.
    THE GAME PLAN:
    At the Store:
    When shopping for bacon look for cuts that appear more meaty than fatty. It will provide the best flavor.
    The Brie can be swapped for Camembert for a deeper, more pungent flavor.
    The Day Before:
    The entire dish can be pre-assembled the day before, covered and refrigerated. Then bake according to instructions listed.

    For all those looking for the Reblochon Cheese, unfortunately we can't get that in the U.S. :( I should have added that to the story! When my nephew and husband came back from the store they explained they couldn't find it, so they used Camembert Instead. Apparently Reblochon is "illegal" in the U.S.?!? along with these other cheese varieties: theculturetrip.com/north-america/usa/articles/fancy-cheeses-that-are-illegal-in-the-us/ who knew?!

    Of course tartiflette is a winter staple here in france! Never tried with camember. Usually use roblochon. Must be super hard to find abroad. You can also replace the potatoes by little square pasta called crozets and you have a croziflette! (Or broccoli for a "lighter" option)

      Yes that's so true we can't actually get Reblochon Cheese here! It's illegal!? Can you imagine? Along with these other "Forbidden Cheese Types"

    Hi Guys! For a meatless option, you could swap the bacon for sautéed mushrooms, just add them in with the mushrooms, and sauté in, ahem butter if you want to be really French, or olive oil works too! :) Enjoy!

    @Entertaining With Beth Had a gathering for dinner this weekend, and made this dish. My only substitution was your suggestion of sautéed mushrooms instead of bacon as it was an all vegetarian meal. Beth, I DIED! It was SO delicious!! Every bite was eaten and a friend said if he was left alone in the kitchen he'd have licked the serving dish! Ha ha! Thank you yet again, for an amazing recipe! I admit I was scared to make this with guests coming as camembert can make your house smell like your baking old gym socks! But I'm so glad I went for it, it was the star of the show! Merry Merry to you again! ❤️

    This looks divine. And it's easy to make. Thanks for suggesting the potato type to us and that we refrigerate it to cook the next day, rather than cooking it then refrigerating it to be reheated for serving the next day. That was a pertinent tip for so many.

    Thank you for sharing! To make it VEGETARIAN, I use sun-dried tomatoes instead of bacon. Gives some color, texture and taste.

      Awe thanks for that :) It's seriously a passion for me and such a joy to share all these recipes that have meant something to me over the years in the hopes that they will then mean something to all of you and your families as you make and enjoy them. I think RUclips has gotten really hard in the last few years for a lot of us (for various reasons) and I think at the end of the day you just need to have a love for what you are creating regardless of how many views a video gets.     Beth, this looks DIVINE! I will DEFINITELY be making this instead of scalloped potatoes, or as my fiance calls them "scallops".     What a wonderful video to start the day! I'm not hungry in the morning EVER, but this recipe looks so wonderful that I may not WAIT for Thanksgiving to make it. I tend to (my own version of) mono-eat, even though this is not one ingredient, it's one dish and that would be the only thing I'd eat at that meal. When I eat salad, that's all I eat; when I eat spaghetti and meatballs, I don't have a salad WITH it. This looks PERFECT for a full-meal deal! Thanks for sharing... YUM!

      That's interesting, I'm never hungry in the morning either & never eat breakfast, sometimes I don't eat until 3 or 4 in the afternoon when I finally feel hungry, but I'll drink a lot during that time. I've done this since I was a teen (over 30 years), unintentional intermittent fasting before it was even a thing. I also tend to mono eat, particularly if I prepare the meal myself. As you stated, a salad, spaghetti, casserole, roasted veggies, baked potaotes, even meat dishes like roast beef, chicken, or fish I prefer to eat the one main item prepared. If I go out, to a restaurant or someone's home then I'll have a little of everything, but at home it's typically mono eating as you call it. Again, it's unintentional, I don't know why I do it, maybe laziness to spend hours making several different dishes each day, & I guess it doesn't make for a "balanced" meal, but who decided that we have to have everything in each meal? Did our ancestors eat like that? I think they probably ate whatever they could scrounge up at the time, some green leafy's here, some berries there, root veggies they came across, a big kill that they were lucky enough to make. I figure as long as within a few days I get a good variety of veggies, fruits, healthy proteins & fats, & if I'm eating real, whole foods, then I'm probably getting everything that I need. I also, in a way, get more variety this way. I've read that eating the same thing day after day is often how food allergies start & that we shouldn't eat the same thing within 3 days of when we last had it, or something like that. Also, for those who believe in food combining theories, then eating this way may be better for digestion since you're usually not combining foods that you're not supposed to & you're able to assimilate & digest your foods optimally. Anyway, didn't mean to write so much, but it was interesting to hear from someone else who does what I do & it got me thinking. :-)

      there are side dishes in other countries too... i mean potatoes dauphinoise is a side dish... well i think where we get it all mixed up really is the eat everything at once instead of having courses...but thats another can of worms

    Tartiflette has always been too heavy for me as a main course! I cook it in individual portions in little cast iron pans as a side dish from time to time, it is delicious.

    Just tried French food in Napa . It’s truly very tasty and rich ! I love it ! This dish is no exception ! It’s gonna be my new side this thanksgiving ! Thanks so much Beth ! And please thank your nephew as well ! He’s a handsome young man ! I am sure he’s fluent in English already ! Cheers !

    I ate tartiflette in Colmar a few months ago and it was amazing! I wanted to make it, but the cheeses they use I couldn’t find in Switzerland (where I live), so I just forgot about the tartiflette. Thank you for reminding me, I’ll try it next week. 🤗 Bon appetit!

    My dad makes a very similar dish with all sorts of things mixed in with the potatoes (hard boiled eggs are some of my favorite).

    This looks AMAZING but I wouldn’t have room for that and the turkey in my oven and the turkey can’t sit out for forty minutes while this bakes.... now I’m gonna have to convince my husband we need a second oven. He’ll be thrilled 😂🤣

      Yes, your turkey can sit out for that long unless it's tiny. I just began roasting turkey a few years ago & Googled how to prep it. Every reputable site that I found (nearly a dozen) stated to tent & let your turkey "rest" for as long as possible before carving, the bigger the turkey the longer it should sit. One site actually said it should rest as long as it baked but i think that's a bit extreme. So while the turkey roasts, prep the potato dish, then just pop it in the hot oven as soon as the turkey comes out & you should have juicy turkey & yummy potatoes done at the same time.

      You should rest your turkey for the same amount of time it took to bake! Then you have lots of time to make extras!

      That's where the roasters you plug in can be so nice. I have one and it will fit a 50 pound turkey. One year my stove went down and I had that, crock pots and a toaster oven. I got done so early and made so much that I sat down and watched the parade and was so lost. I was like what do I do now it's all done and hot when we want it lol.
