- I don't want any beef in my comments. Because this is all about that delicious Carolina pork. I grew up eating both styles but since my family is mostly on the westside, we're doing this style first! Don't worry east side, you'll get yours (if you behave in the comments). Smoked for 8+ hours, mopped down with a vinegar sauce, chopped and served either sandwich style or just straight up on a plate with some hush puppies and slaw. It's a great way to switch up the menu at your next cookout (because barbecue only means pork in North Carolina).

Grocery List:
Pork Shoulder (8-9 lbs)
Hickory Wood (Pellets, chunks, chips, etc)
All Purpose Rub:
1 cup kosher salt
1/2 cup granulated garlic
1/4 cup coarse black pepper
Lexington Style Vinegar Sauce:
2 cups apple cider vinegar
1/2 cup ketchup
1/4 cup brown sugar
4 tsp salt
2 tsp crushed red peppers
Red Slaw:
14 oz bag of coleslaw mix
2/3 cup ketchup
1/2 cup white sugar
1/2 cup apple cider vinegar
1 tsp salt
1 tsp black pepper
Dash of hot sauce
**Additional salt to taste once all mixed together Хобби

I grew up in Chatham County but all my folks are in Goldsboro so I grew up on eastern bbq. But I LOVE all NC bbq regardless. This is a damn fine recipe!

I lived for a brief time in Asheville after I graduated college, and amount of BBQ I consumed down there should have probably killed me. And ever since moving back to upstate NY, I sill crave proper wester NC BBQ. Nowhere in NY can even come close.
