One question: I used to have the burner you have. I found it hard to work with because I felt it doesn't get hot enough. Which do you prefer--gas or electric? Also, do you believe in the "breath of the wok"?
I prefer gas range for wok stir fry cooking. Just like at chinese restaurant. "breath of the wok"? what is that? can you elaborate ? ( i think , i am too old for that! LOL..)
"Breath of the Wok" is a term I learned from reading Fancy White People Magazines. It is the idea that only very high temperature woks can produce this flavor/odor that is special to the wok. People who work on a normal stove are handicapped, because they can't achieve that high heat that leads to "breath of the wok."
If you use only one crab and have a fair amount of sauce left over, could you use it with other seafood without adding any other ingredients to the sauce? If you did add other ingredients, what would you recommend?
I would make smaller batch of sauce. this way , you have fresh sauce every time you make just one crab. left over sauce? you needed to refrigerate it and it might evaporate a little ( will be thicker), then you might add a little water, to dilute it. Thanks for asking , thanks for watching.
I see , you live in L.A. Yes! i been there lot of times. Got lot of Oriental stores and supermarket. I know Silver city seafood and Range 99 are also popular here as well as there. Good source of seafood and economical too. I believed your friends would frequent in your kitchen from now on! Healthy! I make that dish...but coat crab--or lobster--in starch. Deep fry. Then, finish in the aromatics. Add sauce at the very end.
