    I only have black bean sauce, lump crab meat and I ran out of sesame oil, but I am trying this tonight! I love to watch you cook! I am learning so much! Thank you!!!

      your very welcome. yes! they are Authentic Chinese Cooking. I actually learn them from my parents, who are also chef cook in the past. ( they run chinese restaurant - cantonese cooking in the past )

    Hello Sifu, can I substitute the dried black beans with the Lee Kum Kee black beans garlic sauce that comes in a small jar?

      Yes! that is a good quality ingredient. But watch out for salt or sodium contain, it might be high, so adjust your amount, according to your taste. Thanks for asking. my grasshopper, LOL...

    Are the crabs pre cooked before stir frying them in the sauce ? Thank you for the great video.

      Yes, they are pre cooked from grocery. They cooked it then freeze them before shipping , to prevent spoiling. ( from Alaska ) Thanks for asking . Thanks for watching.

    Healthy! I make that dish...but coat crab--or lobster--in starch. Deep fry. Then, finish in the aromatics. Add sauce at the very end.

      yes! it was precook. but for uncooked crabs, just the same, let steam / boil for 15 to 20 minutes. and thanks for watching.

    Can I use cornstarch or potatostarch instead of tapioca starch ?

    I was looking for fryed rice and saw this, it could be used for lobster. Please explain .Whole live or what and what is the difference. Thank you

      yes, you can used lobster tails and the claws. but you can chopped the whole lobster into 3 inch length side and cook this style. Thanks for watching.

    One question: I used to have the burner you have. I found it hard to work with because I felt it doesn't get hot enough. Which do you prefer--gas or electric? Also, do you believe in the "breath of the wok"?

      I prefer gas range for wok stir fry cooking. Just like at chinese restaurant. "breath of the wok"? what is that? can you elaborate ? ( i think , i am too old for that! LOL..)

      "Breath of the Wok" is a term I learned from reading Fancy White People Magazines. It is the idea that only very high temperature woks can produce this flavor/odor that is special to the wok. People who work on a normal stove are handicapped, because they can't achieve that high heat that leads to "breath of the wok."

    If you use only one crab and have a fair amount of sauce left over, could you use it with other seafood without adding any other ingredients to the sauce? If you did add other ingredients, what would you recommend?

      I would make smaller batch of sauce. this way , you have fresh sauce every time you make just one crab. left over sauce? you needed to refrigerate it and it might evaporate a little ( will be thicker), then you might add a little water, to dilute it. Thanks for asking , thanks for watching.

      I see , you live in L.A. Yes! i been there lot of times. Got lot of Oriental stores and supermarket. I know Silver city seafood and Range 99 are also popular here as well as there. Good source of seafood and economical too. I believed your friends would frequent in your kitchen from now on! LOL....enjoy companionship & friendship while they last )( meaning , like me, some of my close friends are gone, me being senior citizen, you know what i mean, LOL...)

      HAPPY WOK I love these videos because they're easy to follow and because there's no talking. So many cooking videos have someone saying "this is going to be so delicious" (or something like that). I find that annoying - I don't need to be told that "this is going to be so delicious". Your videos are perfect as they are - no talking, no music. Perfect! Thanks for all your hard work teaching us. It's much appreciated.
