I ask my favorite chef Fai for Bitter melon menu because i am a diabetic and bitter melon is known to be the equivalent of the vegetable Insulin .I never like it as a kid but I have grown to really like it as I grow older. Chef Fai's method is definitely superior yet simple easy and not time consuming. Take it from a pro ( he use to operate a restaurant) .

+Judith Mopalia I laughed out loud when I read your comment because I have been argued with as well about my order of bitter melon in a Chinese restaurant in Dallas. The lady just could not believe that an American would eat and like this dish. She kept repeating that it tasted bitter, over and over again. She made such a fuss that when I finally got my order I sat and ate it in front of her, even though it was take-out. I used chopsticks to really freak her out. Absolutely delicious food.
You can cut the bitterness by adding salt to the raw melon, then squeeze out the juice from it after it sat for a while. That's almost counterproductive as the bitter taste is good for you (so my parents told me).
I find it funny that there's only 2 Chinese bittermelon dishes on youtube and both of them are from you lol.I guess bitter melon just isn't that popular. I'm not too fond of it myself but I just made it for my wife. Came out great. Thanks!

HAPPY WOK Hello Happy Wok, the word bitter melon is a direct Chinese translation to English. I looked up in Wikipedia, and found out the proper english name is Bitter Gourd, or Bitter Squash. Using that knowledge, I was able to find more RUclips recipes.

Yes! This how we cooked in resto. the bitterness has medicinal health benefit. But if you like it less bitter, then by all means, para boil it. Yes! beef flank steak is the grade i used. .Thanks for watching.

+Alex Yuen ---- Very hard to tell what type of sauce, did they used. Each cook , has his own version. Some are sweet, some are on the sour side ( vinegar ), salty , spicy or add sesame oil . You need to experiment, different kind of sauce combination. But never the less, you got the look already. All you need to do , is modified the sauce. Thanks for watching.

Coincidentally I just tried your recipe for lunch (yum), and I have 1 very minor correction and 2 feedback comments to offer. 1) CORRECTION: You listed "black beans", but as a fan of this dish I'm inclined to assume you actually meant Doichi (the salted & fermented variety). If you just list "black beans" without further qualification, the default culinary meaning assumed by most native English speakers is to canned black beans, and that just wont give the right flavor in this dish. I just thought you might want to clarify that, for the English segment of your audience. As for prep, I just rinsed them very lightly and briefly - the goal being to loosen and separate them, and improve the appearance of the resulting sauce, not dilute their flavor. 2) COMMENT: The amount of oyster sauce seemed a little low ... not sure if it was a typo or just personal preference but I tripled what you listed, to good effect. I like it slightly saucy, and with a very faint hint of sweet. Great recipe. I just wish I could grow them ... guess I gotta buy a trellace. 😁 3) COMMENT: In the photo you cut your melon a bit small ... more fork friendly. I like a larger cut that's more chopstick friendly, and closer to what ive seen in restaurant versions. Instead of a 45 degree rotation bias, I slab it ... figure about a 50-70 degree rotation bias (depending on the size of the melon) AND a 70 degree vertical tilt to the knife, roughly midway between 1/8" & 1/4" thick. Increasing the time of the alkalai blanche from 1 to 2 mins was fine, and a 15 min ice bath afterwards (vs 60) was plenty to shed the alkalai and reach homeostasis on the remaining tannin. As for ancestry, im in New York (USA) ... family arrived here in the mid 1600's. As for my connection to China - my paternal great great great grandfather served for 40 years as a Church missionary in Amoy from c.1840-1880ish, and my late Father was stationed at an air base supplying General Chennault's Flying Tigers (aiding China against Japan) during WWII.

You can use broccoli. Or a combination of green, red bell peppers, and green beans, with sweet onions. The sauce would be good for that too. Any proteins you like, chicken, pork tenderloin, beef, shrimps, fish filet chunks, scallops, etc. If you can’t get a hold of the fermented black beans, you can try the Lee Kum Kee Black Bean Garlic Sauce. 🤪

I made it tonite. I had never had bitter melon before. So I sliced one lengthwise, scraped out the middle with a spoon and sliced it up and ate a slice. For 2 seconds I thought that was ok and then I thought it tasted just like chewing up an aspirin. I went ahead with the recipe hoping the sauce and cooking it would help. It did, but not enough. The rest of the recipe was great! Next time I'd substitute celery for bitter melon. In fact, I will never purchase bitter melon ever again and that includes the Indian version :-)

I used canola cooking oil. but if you can afford , buy peanut cooking oil. it got much higher smoke temperature point. so the meat's juice will be retain much quicker = tastier. veggie too. and yes! you can omit bitter melon and add more onions if you like. thanks for watching.

Yes, you can use pork instead of beef. Mirin is sweet compare to rice wine, but you can use those. I am glad you and you hubby love this. thanks for asking.
rice wine is more economical than those mirin or sake. the effect in cooking in my experience , is practically the same. rice wine will save you lot of money in a long run.

You can cut the bitterness by adding salt to the raw melon, then squeeze out the juice from it after it sat for a while. That's almost counterproductive as the bitter taste is good for you (so my parents told me).

I looked up in Wikipedia, and found out the proper english name is Bitter Gourd, or Bitter Squash. Using that knowledge, I was able to find more RUclips recipes.

Yes! This how we cooked in resto. the bitterness has medicinal health benefit. But if you like it less bitter, then by all means, para boil it. Yes! beef flank steak is the grade i used. .Thanks for watching.

+Alex Yuen ---- Very hard to tell what type of sauce, did they used. Each cook , has his own version. Some are sweet, some are on the sour side ( vinegar ), salty , spicy or add sesame oil . Coincidentally I just tried your recipe for lunch (yum), and I have 1 very minor correction and 2 feedback comments to offer.
1) CORRECTION: You listed "black beans", but as a fan of this dish I'm inclined to assume you actually meant Doichi (the salted & fermented variety). If you just list "black beans" without further qualification, the default culinary meaning assumed by most native English speakers is to canned black beans, and that just wont give the right flavor in this dish. I just thought you might want to clarify that, for the English segment of your audience. As for prep, I just rinsed them very lightly and briefly - the goal being to loosen and separate them, and improve the appearance of the resulting sauce, not dilute their flavor.
2) COMMENT: The amount of oyster sauce seemed a little low ... not sure if it was a typo or just personal preference but I tripled what you listed, to good effect. I like it slightly saucy, and with a very faint hint of sweet. Great recipe. I just wish I could grow them ... guess I gotta buy a trellace. 😁
3) COMMENT: In the photo you cut your melon a bit small ... more fork friendly. I like a larger cut that's more chopstick friendly, and closer to what ive seen in restaurant versions. Instead of a 45 degree rotation bias, I slab it ... figure about a 50-70 degree rotation bias (depending on the size of the melon) AND a 70 degree vertical tilt to the knife, roughly midway between 1/8" & 1/4" thick. Increasing the time of the alkalai blanche from 1 to 2 mins was fine, and a 15 min ice bath afterwards (vs 60) was plenty to shed the alkalai and reach homeostasis
on the remaining tannin.

As for my connection to China - my paternal great great great grandfather served for 40 years as a Church missionary in Amoy from c.1840-1880ish, and my late Father was stationed at an air base supplying General Chennault's Flying Tigers (aiding China against Japan) during WWII.

You can use broccoli. Or a combination of green, red bell peppers, and green beans, with sweet onions.
The sauce would be good for that too. Any proteins you like, chicken, pork tenderloin, beef, shrimps, fish filet chunks, scallops, etc.
If you can’t get a hold of the fermented black beans, you can try the Lee Kum Kee Black Bean Garlic Sauce. 🤪

I made it tonite. I had never had bitter melon before. So I sliced one lengthwise, scraped out the middle with a spoon and sliced it up and ate a slice. For 2 seconds I thought that was ok and then I thought it tasted just like chewing up an aspirin. I went ahead with the recipe hoping the sauce and cooking it would help. It did, but not enough. The rest of the recipe was great! Next time I'd substitute celery for bitter melon. In fact, I will never purchase bitter melon ever again and that includes the Indian version :-)

What type of oil to use for cooking? That meal looks great. Almost looks like beef w/onions if you remove the melon.
I used canola cooking oil. but if you can afford , buy peanut cooking oil. it got much higher smoke temperature point. so the meat's juice will be retain much quicker = tastier. veggie too. and yes! you can omit bitter melon and add more onions if you like. thanks for watching.

Yes, you can use pork instead of beef. Mirin is sweet compare to rice wine, but you can use those. I am glad you and you hubby love this. thanks for asking.
rice wine is more economical than those mirin or sake. the effect in cooking in my experience , is practically the same. rice wine will save you lot of money in a long run.
