I am a bit of a fass pot in what I eat & I'd rather go hungry than eat something crappy that's not authentic tasting.

Roasted duck .and chicken with wood mushrooms were my favorites.Also not really available in the south. Wishing you prosperity in the year of the wood dragon as always.
Nice video mate. I would add less black beans, some sugar to balance saltiness and half a can of beer instead of cooking wine. I even make my corn starch slurry with beer. Works really well with this dish.

the oil in the marinade is wrong! it will repel the marinade from entering the meat. you have wasted your time using baking soda by introducing oil at the beginning.

What to use if not gave baking soda?
Baking soda helps tenderize the meat, but you can omit it if you're using high-quality beef.

Try with ho fun noodles instead of rice. Throw them in at the end for 20 seconds.

Yes I used to do that until a Chinese friend said to add the oil 15 minutes before stir frying to seal in the marinade
