These would be bomb as chocolate orange sandwiches also. You could sub in orange zest/ orange oil for peppermint in the frosting and sprinkle the sides with crystallised orange :)

I couldn’t find vegan butter anywhere in stick form so mine was more of a margarine base. I used earth balance. My dough is in the fridge chilling, but I’m worried how they will turn out because my dough was super super soft. It wasn’t so much sticky, but very soft. I doubled the recipe to make about 40 something cookies and now I’m worried I just wasted a bunch of ingredients. Ahhhh!

What type of stick vegan butter are people using? Has anyone else noticed Earth Balance Sticks do not taste the way they used to in baked goods? I can't find any other complaints about this but something has changed dramatically in my opinion.
I felt Earth Balance Sticks absolutely ruined a batch of sugar cookies, so bad they hit the compost pile. The spread is wonderful but something seems really fishy with the sticks, very strong unpleasant taste when baked. The EB sticks used to be my go to for baking, not anymore!
I don’t know about that frosting.. I like it to be more of a whipped cream consistency actually but I guess that’s just a preference I guess, those still look great through

yea it doesn't melt once with the sugar and there's nothing to go bad in it. Its just oil. You can refrigerate or freeze but you'll need to let them come to room temp so their not hard when you eat them!
oh ya I guess you could freeze it BUT I haven't tried it that way and not even sure if the margarine would act diff. Its so different than the butter product TBH

Trader Joe's has a new (but pricy) vegan cultured butter stick. I have yet to try it but I'm rarely disappointed with their products.
