Plantera with the guitar has a backstory. Basically in the 3DS version, beating plantera drops clementine, which is a guitar. It was reference to the band Pantera.

Well... Plantera is literally a reference to the heavy metal band named Pantera, so the fact that the Plantera town NPC uses a Flying V guitar is also a reference to Pantera, as Flying V guitars are the type that Pantera uses.
