    Interesting take, most cuisines actually develop from influence and using new ingredients.

      Well in this case it seems that he has used the techniques he’s used in the restaurants. He’s definitely using indigenous ingredients that aren’t from that particular area. I had seen one where I believe he used guajillo chiles…which is more of a Nahuatl and border tribe’s ingredients.
