Thank you, Michelle. Friends of mine (who are Peruvian) made this weekly when I knew them best about 20 years ago. I searched online and was so quickly and capably reminded of their process. Economically, they'd serve a big plate of it without the meat and with a bit of radish.
The lighter green one. It looks more vibrant, and I liked the pop of the garlic more in that version. They were both good but I liked that one better, plus you can make it faster since you skip the cooking.

That’s great. Sometimes it’s also served with a fried egg as well, since meat was pricier.
