The composer of the theme is the blind Irish baroque harpist Turlough O'Carolan and Xavier does some cool variations around this theme. O'Carolan should be credited in the video to be fair!
It is an extension to his fingerboard that allows him to be able to press higher notes on the g string. It is cut into that weird shape because normally, people do not play notes that high on the e string. If the fingerboard end for the e string is too close to the bridge, the note could end up being scratchy.
