A tip I learned about softened butter, microwave a glass of water for 3 minutes, take it out and leave a stick of butter on a plate inside the microwave for 10 minutes. You'll get a whole stick of softened butter without it melting or having to leave it out for hours

Oh yeah, this is next on my to do list! A tip. Place the container on the trivet first and then lower into the Instant Pot. If you hold the handles of the trivet snugly against the springform or whatever container, it makes the job nice and easy. Thanks.

What a great recipe! I have to admit, I had a critic nearby that felt the cookie was raw after taking out of the PC. I put in a small oven safe pan after cooling for an hour (so the cookie would keep the shape of the spring form pan, I put in the oven at 400 until golden brown 🤤 FANTASTIC!
Have some dietary restrictions so used a couple of substitutions. Flour: used 3/4 c Almond flour and 1/4c + 2 tbsp coconut flour. Sugar: used granular Swerve and Brown. Used Lakanto Maple syrup. Had the pan you used. Came out looking like your photo. The cookie was Very Sweet - next time I would use less sugar. We put ice cream and strawberries on top and also tried mixed fruit mix. Delicious! Will definitely make again!

Make sure you have a separate sealing ring for desserts or else your dessert will taste like the food you cooked inside the pressure cooker. I learned that lesson the hard way! lol

If you want to eat the dough raw and you're worried about salmonella, just use pasteurized eggs. (Though the chances are extremely slim that would happen, but better safe than sorry?)
I’ve had to put eggs into a small bowl after the yuckiest egg I’ve ever seen (I’ve heard about them but have never seen one) fell into my recipe. Of course it ruined my dish. And my appetite. My granddaughters each got an instant pot for Christmas. Star Wars edition. Where is your edition, I think you’re personally responsible for a great number of us buying an instant pot.
I hate to say this, but I wasn’t a fan. I know it’s supposed to be brownie-like, but it tasted more like a muffin. And, when I made mine it seemed like it was burnt tasting and I followed all the instructions. I still like a lot of your other recipes though. 🙂
I don’t have one either, but I’m sure if you have a 7” pan that will fit in the IP you can use that. You’ll just have to make sure to really grease up the pan and use parchment all the way up the sides as well as the bottom. Then once it’s done, after 10 minutes, slide a knife around the edge to loosen it. If your parchment comes up over the edge all the way around, you could use that to remove it from the pan to a plate.

A 6 or 8 will work. It just needs to be able to fit the spring form inside and sit on the trivet.
This was amazing and me and my husband don't even eat sweets. At some point is it possible you could do a Coffee cake?
