Thank you for this video! I always just sliced it all the way through and then whacked it. But cutting it on top and bottom, and then the other sides before chopping it makes so much sense now. :)

Butcher here and I thought the same thing right away. Also, new knives usually aren't that sharp even if they come pre-sharpened. That level of sharpness won't last 20 minutes of cutting meat without needing to be honed a couple times. Clearly the man maintains his knives well.
Needs to bend those finger tips back
Finger tips are kinda scary but I'll have wet dreams about the sharpness of that knife for a week

Nobody trusts store ground beef, but in most store you can ask them to mince the meat in front of you

It works and gives me a bit more to do with my still new Chinese chopping knife though I'll need to sharpen it a bit more as I ended whacking a bit more to be certain it would be enough.

I just did brisket trim the same way with a lot more fat and it worked took me 20+ mins for small piece tho
More economical way to get minced meat for pasta dishes and home made burgers.

Cool! I mean I like the prep cutting with the meat for a super fine cut. There's a place in northern Iran that is known for their Kebabs. Why? Because they source their meat their, just slaughtered and chop the meat by hand just like this. Except much much finer. Not matter how much you chop, it will never have the mouth feel and texture of something that's been ground. It's not a bad texture by any means, just not that known texture. Definitely can freak ya out lol, especially if your with someone who is geeked about textures. Will scare em forever.
