    I lived in Brighton, England, for three years and the common term for ground beef is "mince." I never thought twice about it, but this totally explains the term.

      @@lifefixx "Mince", as in finely chop, originates from the same Latin as "minutiae" (small details), the original Latin term meaning 'to make small'. 'Mincemeat' (mince for short) came later, indeed from the fact of being minced meat.

    For relatively small amounts , say under five pounds, this is quicker than a grinder when considering the clean up. I’m never buying pre ground meat again.

    People have been grinding meat in Turkey, for thousands of years, there is a special blade called SATIR. It has 2 handles and is very big

      Burger patties (mince in onion, garlic, bacon, to make your patties awesome), taco meat, spaghetti sauce, meatballs, lasagne, chili, Sloppy Joes, tamale pie, Sherherd's Pie.

    which one tastes better? grinder or hand-chopped?

      You'll have to test it out to see. I don't think the style of ground will effect the taste. Just the texture.

      I've had to prep buffalo and bison.
      They're easier to cut if they're partially frozen.
      Chop away until the muscle becomes limber, pop in freezer for 10 minutes, sharpen your knife and get back to it.

    Great video, it’s much appreciated! I should note that you should Never use a wooden cutting board for raw meats b/c the blood from the meat can and probably will soak into the board and you run the risk of not being able to sanitize it properly

      Thanks! I will say that you are correct in that (at least in the country I live in) the restaurant food safety laws require you don't use wooden cutting boards for reasons of bacterial growth. However, there have been recent studies done showing that the risk of bacterial growth on plastic cutting boards is equal to that of wooden boards. Also, wood is naturally antibacterial. "Scientists at the University of Wisconsin have found that 99.9% of bacteria placed on a wooden chopping board begin to die completely within minutes". Something to look into!

      Wooden cutting boards should be treated with mineral oil to prevent drying and cracking, and it also repels liquids.
      For occasional home cooks, wood is fine for cutting and mincing meat -- it's been used for centuries. Many hardwoods have antibacterial qualities: maple, oak, mahogany. It's how the trees resist pests. Cedar is good for serving, but not processing. It's highly anti-toxin.
      DO NOT chop meat on a wood board, then prepare vegetables on the same board. That's when cross-contamination occurs.

      @@lifefixx - The antibacterial qualities of hardwoods are how slow-growing trees resist disease and pests. Boards should also be conditioned with mineral oil so the surface doesn't become brittle.
