Add almonds, walnuts, seeds, bananas,dates and a little raw agave syrup. Yum! I'm also vegan. ❤️🐶Max
Exactly, I do this myself, it comes in so handy & recently had a stomach virus, so glad I had oatmeal made up in jars in the fridge, was about the only thing I could keep down.
I am also a vegan and eat oatmeal every morning. I have been experimenting with various dried fruits, tahini, peanut butter, etc. Its wonderful to live and eat healthy.

I appreciate your sincerity and think we'd be great friends:-) I bought an RV 2 years ago with the intention of moving into it with my puppies and going on the road, but it never happened until accidentally on October 8th the Northern California fires forced me into my RV. I wasn't ready for the lifestyle, and consequently have already upgraded to a newer, longer, wider RV, and I'm really loving it. When I can save up a little bit of money my goal is to go on the road and travel around and do what you're doing. I have so much respect for all you people out there who are living this nomadic life, and I'm jealous because I want to be living at too. The fires came unexpectedly of course, and I wasn't prepared to just go on the road. So I really need to save up some money and have some kind of a plan to be able to make money while I'm out there. For now I'm able to safely Park close to my work where there is plenty of room for my dogs to run around, I'm close to family, and friends. But I look forward to the day when I can just pack up and drive forward visiting people across the country and making new friends on the road. I hope someday our paths will cross. I like the homey-ness of my ClassC too. Mine has a rear kitchen. If I have to hit my brakes, my cabinet doors will pop open too. I now use small bungie cords on the handles. Capone has definitely staked his spot!

Good job. FYI I noticed that the front door locks are on the arm rest. I had the experience of my dog standing with her front feet on arm rest and locked me out ! It was the first time I left the rv without keys. Also my phone and of course main door all locked. I was fortunate that a kind soul lent me his phone to call roadside service. The dog kept looking out the window to see why I had not come back! Ahh pet pals. D
Yes, I had the same thing happen to me but fortunately had my keys in my pocket! Also, have had dogs step on the window mechanism and roll it up on themselves and nearly choke themselves to death! German Shepards - what can I say? Just smart enough...! lol Now I lock the windows when they are riding with me.
I just discovered your channel and I really like you! I used to build Winnebago and Itasca motorhomes on the assembly line in Forest City, Iowa and I have lived off the grid for about 20 years. What I admire most about you Carolyn is that you seem to be exactly who you are, whether anyone is looking or not. You are a role model for women, well, for people, everywhere, anytime. Even alone, by yourself out on the road with your companion, Capone, you maintain a work schedule and I'll bet you try to do the right thing in any situation...regardless of whether anyone is there watching or not. I am so sorry you lost your best friend sometime after this video, and I know the road gets pretty long and lonely without him. I love your new home. It is a Winnebago, they are well built, good choice. I had a big bottle, like 32 oz of chocolate flavored syrup that you put in coffee, BREAK, one year. It was under the stove, sink, pull out pantry where I stored several different flavors. Needless to say, everything that was glass got socks pulled up over them. They are wonderful to keep things safe. Vinegar, oil, etc. jars I can write on I label on top. I also stuffed pillows in some cabinets so things didn’t shift while we were moving. You have done a great job of organizing. Cut sleeves off old sweaters to stuff your crock bowls in. Thrift stores?
It suits you so well. It's gotta be nice to be in an RV where everything works. Even Capone is happy. He is such a sweetheart. Good to see all that saving and dealing with broken stuff was worth it. Now you've found something that really suits you. It's lovely to see you happy.

This was great - been waiting! It’s really nice, and you and Capone seem so happy. I think he likes being able to guard the entrance, yet feels protected in that spot under the table. I notice a sample of tile for the back splash and have to say that would look so awesome to install around the stove etc. it's very nice. I am currently shopping for a 22 to 24 ft class C and I can hardly wait. When I was little I used to love to build forts. The first time I saw the inside of a truck camper I thought... I want a house like this. I love the overhead sleeper, it's so cozy especially for daytime sleeping. But with more than 20 years of living in various truck campers I have decided to get a class C this time. Happy trails !
I am shopping for our RV, can't wait to get on the road. Wonderful video Carolyn loved it. I want a class C and thought a 22 to 24 would do it. Maybe I should be looking for a 25ft. I have an 8 pound Chihuahua and a 66 pound mixed breed. Love my fur babies, gotta bring them along.
I love your new home! I see how proud you are of it in how well you are caring for it. It looks really nice. I wish I could send you some salt, bread and wine, like he gave to the family moving in their new home in the movie It's A Wonderful Life. George and Mary give the Martini family bread, salt and wine. Mary to Mrs. Martini: "Bread that this house may never know hunger." Mary to Mrs. Martini: "Salt that life may always have flavor." George to the Martinis: "And wine, that joy and prosperity may reign forever. Enter the Martini castle." Seeing the coffee made me think that maybe you could have a list of a few things that you like and use a lot somewhere here. You could change it frequently ... if you have enough for the moment, you could take something off the list. But even gift cards for a favorite store. Walmart comes to mind, since some people stay there. But it could be for a gas station, a pharmacy, a veterinarian, a gym or a repair shop. Sometimes it's more fun to gift a specific item than just money. If you don't have a list, remember to every now and then mention the things and places you like. For instance, what is your favorite seasoning or spice? I do this for myself. I call it a wish list. Nobody else sees it, but sometimes it's nice to keep track of what I need so if I am out shopping I get what I really want/need first. It also works for goal setting, planning, and visualization. I also have a gratitude list that I use as much as possible. And a list of my favorite things ever. That list I use to write to the company or person and thank them. This has been very lucky for me, I often find that these things show up in my life when I least expect it.

Very nice, organized and clean. If you don't use it loose it. Zip locks are your friend and everything is tucked away. Try Goo Gone to get the glue off. Also, Simple green is a great environmentally friendly cleaner. Great idea with the rods. If its not broke don't fix it. Love all this space and I'm glad you purged the clothing. Buy a few tops throw a few tops out, lol. Baking soda is great at scrubbing pots and pans its a more natural cleaner and easy on the pocket.
My stuff is organized similar to yours. Those bars to keep stuff in the cabinet are life savers. I have them in almost all my cabinets. Always nice to see what someone else has done. Get good ideas that way. Thanks
Loved the tour and really have marveled as you have grown and changed. I'm always waiting for your next video. One concern I have is the heavy canned goods in the upper cabinet. With the rough roads you travel I am afraid over time they will loosen and crash. The benches might be a better place for heavier stuff if they are easy to access.

I think with Matilda she had higher priorities to fix (like brakes and such) where the money needed to go. Glad she found a newer RV and I'll bet the minor fixes will be easier to keep up with. I love the windows and all the light in Pheonix, it makes a big difference in so many ways! Hopefully with a few feet less to worry about there will be fewer backing up incidents ;).

I asked that mpg question on another one of Carolyn's videos but don't think I got an answer. I know she has 53k followers so it must be hard to answer or even see all the questions in comments. I'm hoping she will do a video on the mpg of Matilda vs Phoenix. I wish I could find her address, I wanted to send a Christmas card and something I knit, I've asked that question about address before but haven't found it yet; do you know where to find her mailing address? I don't have phone, TV or internet at home because I can't afford it. I have data on my cellular phone that I use for hotspot for my laptop. I'm lucky to have the old gophone plan so I have unlimited talk, text, and hotspot data but once my high-speed is used up for the month I'm on low speed until next month renewal date so then it takes an hour or more to watch a 30 minute video. I wish I could afford to be a "friendly supporter" on Patreon because I think there is more access and information there but I live on less than $700 social security a month. I make some pocket money handcrafting, mostly sewing for people, but it varies each month. I plan to sell my place so I can get out from under the mortgage and get an rv or do some sort of conversion but I haven't been able to get my asking price yet but hoping 2018 will bring that sale. Up until about 10 years ago I had a camper of one sort or other because I traveled for my job. I've had a truck with large over-cab camper, I converted a step van, I had a Ford Econoline cargo van that I just sort of camped out of with mattress, ice chest, and propane burner, a truck and 24' travel trailer, two class A motorhomes, one was an old Winnie that my Dad sold to me cheap when he bought his Itasca Class C, and the other class A I had was a Bounder. I never actually owned a class C but I used my Dad's and I did love how much easier it was to navigate than the class A. I've never had a schoolie but I've been following some schoolie dwellers and I'm intrigued except the mpg is about 10mpg according to most all the schoolie owners I've been following. I don't remember what the class c mpg was on my Dad's camper but it seems like it was around 20 mpg, could that be possible?

Do u guys let the oatmeal cook itself overnite in the water u boiled? It's great. The pot doesn't get crusty. You can make enuf for about 4 days.

What I admire most about you Carolyn is that you seem to be exactly who you are, whether anyone is looking or not. You are a role model for women, well, for people, everywhere, anytime. I love your new home. It is a Winnebago, they are well built, good choice. I had a big bottle, like 32 oz of chocolate flavored syrup that you put in coffee, BREAK, one year. It was under the stove, sink, pull out pantry where I stored several different flavors. Needless to say, everything that was glass got socks pulled up over them. They are wonderful to keep things safe. Vinegar, oil, etc. jars I can write on I label on top. I also stuffed pillows in some cabinets so things didn’t shift while we were moving. You have done a great job of organizing. Cut sleeves off old sweaters to stuff your crock bowls in. Thrift stores?
It suits you so well. It's gotta be nice to be in an RV where everything works. Even Capone is happy. He is such a sweetheart. Good to see all that saving and dealing with broken stuff was worth it. Now you've found something that really suits you. It's lovely to see you happy.

This was great - been waiting! It’s really nice, and you and Capone seem so happy. I think he likes being able to guard the entrance, yet feels protected in that spot under the table. I love the amount of storage you have, it's really amazing. You have fixed your home up so cute. And look at Capone under the table. He looked so sleepy, like mom can I just get 40 winks in. I notice a sample of tile for the back splash and have to say that would look so awesome to install around the stove etc. it's very nice. So cute how you had all the Christmas cards hanging up and the lights over your fluffy bed. You really found the perfect Class C. Thank you for letting me see what you have done with Home Sweet Home. I am currently shopping for a 22 to 24 ft class C and I can hardly wait. When I was little I used to love to build forts. The first time I saw the inside of a truck camper I thought... I want a house like this. I love the overhead sleeper, it's so cozy especially for daytime sleeping. But with more than 20 years of living in various truck campers I have decided to get a class C this time. Happy trails !

I want a class C and thought a 22 to 24 would do it. Maybe I should be looking for a 25ft. I have an 8 pound Chihuahua and a 66 pound mixed breed. Love my fur babies, gotta bring them along.

Seeing the coffee made me think that maybe you could have a list of a few things that you like and use a lot somewhere here. You could change it frequently ... if you have enough for the moment, you could take something off the list. But even gift cards for a favorite store. Walmart comes to mind, since some people stay there. But it could be for a gas station, a pharmacy, a veterinarian, a gym or a repair shop. Sometimes it's more fun to gift a specific item than just money. If you don't have a list, remember to every now and then mention the things and places you like. For instance, what is your favorite seasoning or spice?
I do this for myself. I call it a wish list. Nobody else sees it, but sometimes it's nice to keep track of what I need so if I am out shopping I get what I really want/need first. It also works for goal setting, planning, and visualization. I also have a gratitude list that I use as much as possible. And a list of my favorite things ever. That list I use to write to the company or person and thank them. This has been very lucky for me, I often find that these things show up in my life when I least expect it.
Oh my gosh! Amazing storage and organization. It's almost easy to stay organized! Phoenix is going to be a lot of fun to watch you do diy improvements, beautification and projects. Can't wait!

This brings back so many memories. When the kids were small we had a 20 ft. WINNIE. Boy .. so envious of that extra 4 feet! Nice set up.
Very nice, organized and clean. If you don't use it loose it. Zip locks are your friend and everything is tucked away. Try Goo Gone to get the glue off. Also, Simple green is a great environmentally friendly cleaner. Great idea with the rods. If its not broke don't fix it. Love all this space and I'm glad you purged the clothing. Buy a few tops throw a few tops out, lol. Baking soda is great at scrubbing pots and pans its a more natural cleaner and easy on the pocket.
Tamara Weber, yes for baking soda. Use the bs with vinegar on the outsides of pots to clean back down to the metal.

My stuff is organized similar to yours. Those bars to keep stuff in the cabinet are life savers. I have them in almost all my cabinets. Always nice to see what someone else has done. Get good ideas that way. Thanks

Loved the tour and really have marveled as you have grown and changed. I'm always waiting for your next video. One concern I have is the heavy canned goods in the upper cabinet. With the rough roads you travel I am afraid over time they will loosen and crash. The benches might be a better place for heavier stuff if they are easy to access.

I think with Matilda she had higher priorities to fix (like brakes and such) where the money needed to go. Glad she found a newer RV and I'll bet the minor fixes will be easier to keep up with. I love the windows and all the light in Pheonix, it makes a big difference in so many ways! Hopefully with a few feet less to worry about there will be fewer backing up incidents ;).

I have a question gnawing at me for a long time, you've probably addressed it and I missed it but, do you know what kind of mileage you get with your new rig? You do so much back roads traveling and most of the time it seems like there are no gas stations any where near you. Sorry if I'm asking an already answered question. 🤗
I asked that mpg question on another one of Carolyn's videos but don't think I got an answer. I know she has 53k followers so it must be hard to answer or even see all the questions in comments. I'm hoping she will do a video on the mpg of Matilda vs Phoenix. I wish I could find her address, I wanted to send a Christmas card and something I knit, I've asked that question about address before but haven't found it yet; do you know where to find her mailing address? I don't have phone, TV or internet at home because I can't afford it. I have data on my cellular phone that I use for hotspot for my laptop. I'm lucky to have the old gophone plan so I have unlimited talk, text, and hotspot data but once my high-speed is used up for the month I'm on low speed until next month renewal date so then it takes an hour or more to watch a 30 minute video. I wish I could afford to be a "friendly supporter" on Patreon because I think there is more access and information there but I live on less than $700 social security a month. I make some pocket money handcrafting, mostly sewing for people, but it varies each month. I plan to sell my place so I can get out from under the mortgage and get an rv or do some sort of conversion but I haven't been able to get my asking price yet but hoping 2018 will bring that sale. Up until about 10 years ago I had a camper of one sort or other because I traveled for my job. I've had a truck with large over-cab camper, I converted a step van, I had a Ford Econoline cargo van that I just sort of camped out of with mattress, ice chest, and propane burner, a truck and 24' travel trailer, two class A motorhomes, one was an old Winnie that my Dad sold to me cheap when he bought his Itasca Class C, and the other class A I had was a Bounder. I never actually owned a class C but I used my Dad's and I did love how much easier it was to navigate than the class A. I've never had a schoolie but I've been following some schoolie dwellers and I'm intrigued except the mpg is about 10mpg according to most all the schoolie owners I've been following. I don't remember what the class c mpg was on my Dad's camper but it seems like it was around 20 mpg, could that be possible?
