Hello, friend! I know I'm late to this, but I saw that you hadn't received an answer. Anyways, the traditional protein for jollof is goat meat 😊. Sometimes, we eat the rice with beef, fish, or chicken, like this man did. Honestly, it's dependant on your preference. Hope this helps✌🏿😊
In my opinion Nigerian jolof rice is one of the best it has it all spice flavour but…Senegal is the best it has flavour if u want spice it’s usually served with it and it also original red from there but no hate this is good😊

We actually use, grounded pepper from nigerian. It gives it that spice

You could use mild Turkish red pepper paste instead of chilli? Or basic capsicum?
