Chef, you might like "calypso" cheesecake. Heavy. But good. Lime, rum, and pineapple in the cake, pineapple/rum sauce on top. You could probably put macadamias in the crust, too

Made it yesterday with waaaay too rich cookies with waaaaaaay too much butter for the crust, and the whole thing was absolutely amazing. I did it all without an electric mixer too, and it wasn't a problem at all. So good!

Chef John, you are frankly my go-to guy/channel for a receipe when I need one for a special occasion. used to make something similar.. Use Nilla Wafers as the base instead of all that work with graham crackers then use a no bake cheesecake (cream cheese and instant pudding) as the filling.

I know exactly how you feel about having to clean up a food processor. I hate that chore too. But I plan to make baklava for each of my family's July birthdays (3 of them) plus the family reunion offering this year (first time since the start of the pandemic madness), and chopping up all those pistachios and walnuts by hand is going to be too much *sigh*. So I guess I will just grin and bear it, and clean up that sucker afterwards.

When my friends finally start having their New Year’s Day open house again, I’ll be bringing these!
Ingredients:
Crumb Crust:
1/2 cup finely crushed graham cracker crumbs
1 tablespoon white sugar
2 tablespoons melted butter
1/8 teaspoon vanilla extract
Cheesecake:
1 pound cream cheese, at room temperature
1 lime, zested
1/2 cup white sugar
1/2 teaspoon vanilla extract
1 tablespoon all-purpose flour
2 large eggs
Whipped Topping and Fruit:
1/2 cup cold heavy cream
1 tablespoon sour cream
24 slices fresh strawberry
72 fresh blueberries
Directions:
Preheat the oven to 325 degrees F (165 degrees C). Spray 2 12-cup mini muffin tins with nonstick cooking spray, and use your finger to make sure the inside of each cup is well greased. Place muffin tins on a sheet pan.
Stir together graham cracker crumbs, 1 tablespoon sugar, butter, and 1/8 teaspoon vanilla extract in a bowl until crumb mixture resembles wet sand. Spoon a slightly rounded teaspoon of crumb mixture into the bottom of each cup. Use a spoon to spread crumbs into a relatively even layer.
Set one muffin pan on top of the other and press lightly to compact the crumbs. Repeat with the other pan.
Combine softened cream cheese, lime zest, and 1/2 cup sugar in a bowl, and beat until light and fluffy with an electric mixer or whisk. Add 1/2 teaspoon vanilla, flour, and 1 egg; beat until egg is incorporated and mixture is smooth. Add remaining egg; whisk until smooth.
Transfer batter into a piping bag, and pipe into the muffin tins, filling them all the way to the top. You can use a spoon; but a piping bag is neater and takes much less time. Use a skewer to stir each cup to remove any air bubbles. Tap pan on the counter to settle batter down.
Bake in the preheated oven until batter rises slightly and very small cracks appear on the surface, 20 to 25 minutes. The cheesecakes on the inside may cook more slowly than the ones on the outside, and may not rise as high or crack.
Let cool to room temperature, about 20 minutes. Remove from the tins. Wrap and refrigerate cheesecakes until fully chilled, at least 30 minutes.
To make whipped cream topping, whisk cold cream in a bowl until soft peaks start to form. Add sour cream, and continue whisking until medium-stiff peaks form. Top each cold cheesecake with whipped cream, 3 blueberries, and 1 strawberry slice.

My entire neighborhood gets together for “Happy Hour” once a week….I will be making these for the next meet. However, I will bake mine in a water bath which will bake the cakes more evenly to hopefully eliminate the well in the center of the cakes.

Thanks again for more great recipes.. cheesecake is a regular offering at all gatherings family and other. .I have made these sans the mini pan ( never invested) but w mini papers. The crumb part can be a bit tedious. Maybe not -? I use a shot glass to tamp down crumbs . All's well that ends well. Right?

Growing up, my mom would make a no-effort version if this with a single Nilla wafer at the bottom and topped with no-bake cheesecake filling.
Splattering some food coloring on the plate could turn this into something that resembles a dish at a Michelin star restaurant 😅

Traditionally the tart is in the body of the cake itself.
The recipe looks fine, just reversed.

The measurements for this recipe are off. I cut the recipe in half and ended up with fewer than 10 cupcakes that were not even half way filled. I’m disappointed and frustrated because I don’t have time to make another batch. Will not try this recipe again and would definitely not recommend others to make it.
