- Sharing with you a very unique kofta curry recipe. The koftas are made of a very flavorful and healthy ingredient, the lotus root, known as Kamal Kakri in Hindi and 'bhei' in Punjabi. Lotus root has a crunchy, tender bite to it which gives a unique texture and taste to the koftas.
How to clean the holes of a lotus root stick
Preferably buy a lotus stick that is sealed at both ends. These are generally clean, and will need very little extra cleaning.
The best way to clean lotus stick is to hold it under a tap with running water with full pressure. The dirt will wash off. Once you cut it cross-wise, examine the slices and rinse again if needed. You may use a tooth-pick to clean any stubborn deposits.

Ingredients:
Lotus root/kamal kakri/bhei 200 g
Water (for boiling + 600 ml+ as required)
Oil 4 tbsp +for frying
Besan/ chickpea flour 4 tbsp + 1 tsp
Ginger garlic paste 1 tbsp
Green chili paste 2 tsp
Onions ( 2 medium sized, chopped
Tomatoes ( 2 medium sized, chopped)
Cilantro/coriander leaves, 1/2 cup +for garnishing
Salt (1 and 1/2 tsp or as required)
Red Chili powder 1/4 tsp + 1/5 tsp
Kashmiri Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp + 1/3 tsp
Coriander powder 1 tsp, heaped
Asafoetida/hing 1/5 tsp
Roasted cumin powder 1/2 tsp
Garam masala 1/4 tsp + 1/4 tsp
Carom seeds/ ajwain 1/2 tsp
Cumin seeds 1 tsp

What is the right ratio of besan for making lauki and kela kofta
Rekha, for lauki kofta, besan is approximately 1/4 cup for 500 g lauki. I say approximately because it depends on how well you have squeezed out the juice.
I do not make kele ke kofte, so cannot really comment about that.
