Chicken Korma Recipe: Noboborsho Special-Old-Delhi or Mughlai-Style Easy Chicken Korma

  • Various types of kormas exist, but this recipe in particular is based on the Delhi-style korma, sometimes called 'shahi korma' or 'Mughlai korma'. Kormas are rich, special dishes that were eaten on special occasions, unlike kaliya which was lighter and considered everyday food.
    Korma was created in the Mughal court and further evolved in the court of the nawabs of Oudh. Korma-as we know it in the India, Pakistan and Bangladesh-is a result of the fusion of Persian, Central Asian and Indian way of cooking.

    According to author Rana Safvi, for this kind of korma, which she grew up with, no turmeric or tomatoes would be used. Kormas are cooked in lots of yoghurt, and the sweetness of the fried onion and the nuts balances the acidity and salt. Kormas are also cooked entirely in ghee, but we have used a combination of neutral oil and ghee instead. Obviously, the ghee-only version will taste better. We have also gone easy with the cream, using it only for garnishing. This is not for health reasons-we genuinely feel that this particular version of korma tastes better if the cream is kept to a minimum.

    Between this channel and Banglar Rannaghor and others there is such a wonderful variety of presentation styles highlighting the best of Bengali cooking. Really proud of all of you as a Bengali. The world can only be a better place if there was more Bengali cooking in it.

    One hack that I have discovered is to mix a teaspoon of water with the kashmiri laal lonka guro (red chilli powder) and keep the mix for about a minute or so before adding it to the oil. Really brings out the color and flavors. This is done a lot by the Kashmiris for their cooking.

      This hack is applicable for any powder spices like haldi. Jeera dhania n chilli. It brings out the flavour more effectively

    This recipe is epic!!
    The pre prep does take a bit but honestly the taste makes it worth every minute spent!
    We extrapolated the ingredient quantities for a 1000 grams of chicken and I must say it was exactly what it needed!

    This is the correct way to prepare Qorma. The then foreign ingredients such as tomatoes, coriander and also green chillies (used liberally to flavour the over-rates Hyderabadi biryani) are totally absent in this recipe, that is more than enough to prove its authenticity. My mother leaves birista as it is, adding char-maghaz also helps. Lovely recipe. Thank you Bong Eats.

      You do realize that chicken korma itself is a foreign import? Also not all hyderabadi recipies use tomato green chilli and coriander... mostly we use tamarind extract for the sourness. They are not typically as heavy as their north indian counterparts. You should really try authentic hyderabadi food not the ones you get it places like paradise and bawarchi..

    I subscribed to your channel when i saw the recipe of kosha mangsho for the first time and after that,it became my favourite recipe..And now this,the chicken korma,these two recipes are so easily made..I bet your no of subscribers will increase due to these two recipes..

    I made this today for my family.. it came out so so well! Delicious recipe!! However, I skipped the sugar, nutmeg and mace. I paired this with ghee rice :) YUMMY!!

    As usual another classic in typical Bengali way... Thanks for it! Just an addition, one may add a pinch to a 1/4 teaspoon of flour/cornflour/cornmeal or if nothing, atta to yoghurt while beating to prevent it from curdling while on heat/cooking.

    I made this today. It was ultimate and superhit in the family! Nobody believed I cooked this coz I've never really done much cooking in life. They literally thought this tasted like restaurant korma. I followed the instructions to the last and just added little bit of water to make little more gravy. Thank you for this.     From the Russian traditional cooking perspective, this looks SO complicated. But I guess, that's why Indian food is so delicious! You have to put much effort (and lots of spices) in it. 👍

      Anna Litviniuk Indian food vary significantly from region to region. The dishes that are generally known in the west are from north or south India and generally they do contain more spices. But check out bongeats’ other videos - they are documenting Bengali food which is in eastern India and even in Bangladesh. You will be surprised by difference in spice levels in these dishes - particularly the vegetarian and the fresh fish recipes. E.g Panchmishali torkari, shukto, pabda maach (fish) jhol etc.

    Tips: use coconut burada for the right texture. Use yellow chilli powder for the correct heat. Rub with slit green chillis before marinating. Also in old Delhi the whole leg and thigh as well as big breast pieces are used. If you don't want to use water use chicken stock. But it helps with the flavours.

      Will do. In fact, two years ago we had filmed machher kaliya when we were visiting Calcutta, but unfortunately the light wasn't great and the shots did not come out looking very nice. So we ended up scrapping it. Will make kaliya again once we're back.

      Ha ha, yes it's a common misconception. That's not blood--blood clots. It's something called myoglobin. Nothing to get freaked about since the first frying step is just to brown the meat and build some flavour. The chicken actually cooks when it's braised in the sauce on dum for the next 30 minutes.

    Brilliant video. The things we'd do differently in Bangladesh is to omit the red chili powder and garlic. And we'd add lots of sliced green chilies at the end for aroma.

    Excellent recipe! I just made it and was delighted how good the results were. Couldn’t stop licking my fingers. Was unable to master the corn flower technique on the fried onions. But that is a separate topics that I need to look into. Over all, wonderful recipe. Well done!

    Hi I am great fan of your channel for quite a while now. Thanks for all your wonderful recipes. I have a question. Like you have written in the description that you attained the idea about birista from Vahchef. As creators, do we have to take a permission from that person if we want to use his/her ideas or just giving the link ( from where the idea is taken) in the description box is sufficient enough. Please let me know.

      No, you don't have to take permission but it is always good practice to give credit where it is due. A lot of the content online is passed off as "original", while most of it is actually a rip-off of an existing idea without anyone citing their sources. Giving proper credit doesn't take much--just a small line in your video or description with link to the original, if available. It lets your audience know where you are coming from, what your influences are, etc., is fair to the original content creator, and is generally a decent thing to do. :-)

    i have tried the recipe and it was awesome. just kheye uthlam, but mukhe taste nosto hobar voye brush korar iccha chole gelo, only there was ovab of gol morich in kitchen so add kora hyni. bakita just osadharon. thanks
