    Introduction:
    Recipe Name: Creme of Mushroom Soup
    Usage: Main course
    Similar to: Chicken Creme Soup
    Serving Size: 2
    Equipment Used: Bowl, Frying Pan, Cutting board
    Meal: Non-Veg
    Mushroom Group: Oyster Group
    Ingredients Main:
    Phoenix Oyster Mushroom - 200 g (Chopped Cutting - you can use any oyster mushroom instead of Phoenix oysters.)
    Butter - 3 tbsp
    Onion - 2 tbsp (Chopped)
    Garlic - 1 tbsp (Chopped)
    Chicken stock - 200 ml
    Milk - 2 Cups
    Boiled chicken - 50g (Cut in cubes)
    Cream - 1 tbsp
    Black pepper - ¼ tsp
    Salt - 1 Pinch
    White pepper -1 Pinch
    Chicken powder - ¼ tsp
    Parsley - ½ tsp (Chopped)
    Olive Oil - 1 tbsp
    Preparation:
    1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.
    2. Since Superlicious Mushrooms are cultivated in a very clean environment washing is not required.
    3. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.
    4. Remove the stem by cutting it with a knife, place the top half of the mushroom on a cutting board and cut into ½ inch thick pieces.
    5. Other than black pearl & king oyster, most of the oyster mushroom stems are hard to cook & they are recommended to be discarded.
    Cooking:
    1. Heat butter & olive oil in a pan over medium-high heat until melted. Sauté onions and garlic for 2 to 3 minutes until softened.
    2. Add mushrooms & cook for 5 minutes.
    3. Pour in chicken stock and 1 cup of milk. Allow to cook for 3 more minutes.
    4. Using a blender, blend the mixture to the desired consistency and transfer it back to the pan. (This could be coarse or fine as per taste)
    5. Reduce heat to low-medium heat, and add in boiled chicken cubes, remaining cup of milk and cream. Season with salt, pepper, white pepper chicken powder and parsley.
    6. Serve in a bowl with garlic bread and decorate with cream on top.
    Safety Instructions:
    1. Always use sharp knife, when you use a dull knife to cut, you need to apply more force. As a result, the knife is more likely to slip and this increases the risk of injury.
    2. In order to prevent contamination, it is important to clean your knife as soon as you’re done using it. Leaving your knife on your cutting board or in a sink full of soapy water clutters your kitchen and creates opportunities for contamination and injury.
    3. Always use a cutting board when cutting ingredients. This will allow you to cut consistently and protect your work surface in the process.
    4. Never leave your stove unattended while cooking. Stay in the kitchen while you're frying, grilling, boiling or broiling food. If you have to leave the room-even for just a moment-turn off the stove.
    5. Keep cooking equipment clean. Crumbs in a toaster, built-up grease on the stovetop, and excess dust behind your appliances are fire hazards.
    Chef's Recommendation
    1. If you like the Mushroom Chunky do not fine blend the Soup Mixture, keep it coarse. You can even have bigger chunks of mushroom added separately.
    2. You can also try it with other Oyster Mushrooms.
    3. For a Vegan variation omit the boiled chicken.
