LEARN HOW TO MAKE A RICH CREAMY MUSHROOM SOUP RIGHT AT HOME!
LAY HO MA! When I was a kid (or a real Yeung man), one of my favourite canned soup was the Campbell's cream of mushroom soup. I remember the earthy and salty flavour with a full bodied creamy texture being so comforting. Join me in this episode and learn how to make an easy dairy free, vegetarian / vegan, umami packed creamy mushroom soup recipe today!
Ingredients:
1/2lb mushrooms (cremini)
3 tbsp olive oil
1 onion
2-3 pieces garlic
1/2 potato
salt and pepper to taste
4 1/2 cups veggie stock
1/4 cup cashews*
1/4 cup water
Directions:
1. Remove the stalks from the mushrooms and set aside along with half of the mushroom caps
2. Slice the remaining mushroom caps and set aside
3. Heat up a stockpot to medium heat and add a drizzle of olive oil
4. Roughly chop the onion crush the garlic. Sauté the onions and garlic until golden brown
5. Thinly slice the potato, then rinse and drain in cold water to remove the excess starch
6. Add the potato and mushroom stalks/caps (not the sliced caps) that were set aside
7. Season with salt and pepper and cook for a few minutes
8. When the vegetables are browned, add the vegetable stock
9. Simmer on medium for 10min
10. Add the cashews, water, salt and pepper, and a drizzle of olive oil into a blender. Blitz on high until liquefied
11. Add the cashew cream into the pot and stir to combine
12. Pour the entire pot into the blender
13. Place the stockpot back onto medium heat. Add a drizzle of olive oil, the sliced mushroom caps, and season with salt and pepper
14. Sauté for a few minutes. Meanwhile, blend the soup on high
15. Add the soup back into the pot and stir
16. Plate and finish with fresh cracked pepper and a drizzle of olive oil
*soak the cashews overnight to soften them if not using a high powered blender

I love how you utilized potatoes to thicken it, I do it all the time! This sounds insane but I was craving something sweet but healthy so I just made a creamy blender "pudding shake" with a few small cooked golden creamer potatoes, a few dates, maple syrup, cocoa powder, a dash of cinnamon, cayenne, and some almond milk. OMG, crazy good!

Made this a few times now. Usually I add less veggie stock to make a thick and creamy pasta sauce. I love this recipe! It made the most amazing vegan “cream of mushroom” fora green bean casserole on thanksgiving. It was a huge hit. Thank you for your sharing all of your creations!

This is the most delicious creamy mushroom soup by far! I was a little skeptical of the potatoes at first, but it added a nice creaminess to the soup. The cashew cream was amazingly simple..and delishious! This is my favorite of shroom soups!! Thank you Wil, always delicious recipes!

It’s always good to soak the cashews over night or boil them for 10-15 minutes. Not just to soften them, but It helps to leach out the lectins (toxins) in raw cashews that are very hard to digest before blending and consuming.

Pretty sure the cashews sold are already cooked/steamed before sold. At least the ones in the US.

@@edonna7370 Google it and you will see that raw cashews are not sold in the US. All cashews are heat treated in some way before sold here (to remove the toxic resin in them).

You can reduce the ammount or use a lite version.
@@yfelwulf I know and I always do that or substitute another nut milk in combination, but coconut milk is too rich for me.

I love this recipe and am looking forward to making this soup which is one of my favorites. My addition to my creamy mushroom soup is to make it a chunky soup by adding lots of chopped celery and water chestnuts.

I made the soup for the second time and I loved it. I just made a slight variation, I used zucchini instead of potatoes as well as I added a bit of nutritional yeast to the cashew mix and it was a real success. Thank you for this delicious recipe.

This is a great recipe! As are all the ones I tried from your channel. I did sauté the mushrooms with butter, and added almond butter after blending the soup, to make it thicker. It was perfectly creamy yet not too heavy.

I've seen on other cooking shows how u can stop the pressure from building is if u only put half the mixture in, and start with some low pulses before you get going. And to also not put the lid on tightly, to crack it, put a towel over the top of it, or if your blender has an insert in the center, to remove that and then put the towel over. Hope this helps!

Quick question: Why are you not directly pouring the veggies & stock in the blender after making the cashew cream? Is there any benefit to mixing the cashew cream with the rest and bringing it to a boil before blending everything together?
Hello Wil, I have never tried using cashews to make mushroom soup but will definitely try now. I have always added cooked, blended rice as a thickener. Thanks for the tip.

Love your channel and have both books. It's recommended when blending hot stuff in Vitamix to remove the plastic stopper and cover the opening with a handheld towel to avoid the possible disaster of the heat explosion.
I would wait a bit n let things cool down a bit before blending. To be safer.

Made this last night with a few additions. I added a bit of broccoli and cauliflower. I didn't have cashews so used macadamia nuts and it was a huge hit for dinner. Everything came together so amazingly. super delicious. Excellent recipe. Saving this as our go to mushroom soup recipe.

This soup was awesome. I doubled the recipe. The half cup of cashews didn't thicken it enough so i blended another cup of cashews and water which thickened it perfectly. Thank you! Freezing it for granddaughter in college!

The consistency is so smooth and creamy, just like a cream soup, but it's a little more liquid, which makes the soup much lighter. The golden colour of the mushrooms promises a great taste! Love it! 😍
