    Hi, this is a random question, but I wanted to ask you if I can use the neapolitan pizza recipe for business, but use it for a conveyer oven, not a wood fire oven. My family has a pizza shop in San Francisco and we're always looking to improve.

    That's cheating if you use already made mozzarella

      False, stracciatella is made with mozzarella, and not from curds. It originally is a invention from mozzarella producers to reuse unsold mozzarella. So this is how real stracciatella is made.
