Great recipe, one could also add a few leeks for variety.

The lemon help us to absorb the iron but for the other side the cheese doesn't allow to the body to absorb the iron . But spanakorizo without feta cheese ??? No way :p

Where do you get your olive oil?

if she lives in Greece, which she probably does, it is most likely that she has her own olives. In Greece, even if you don't have your own olives, you can easily find a producer and buy from him.

Good recipe, except the cumin doesn't exist in the original recipe.
Also, if you add the feta then you can't absorb the iron in the spinach even with the lemon, because calcium makes iron absorption more hard,
so please avoid dairy, it's a delicious vegan Mediterranean food on its own.
What you need to give to spanakorizo the spanakorizo flavour is good quality spinach, dill a pinch of black pepper and fresh lemon.
