    Whenever I get depressed watching the news on tv I watch videos like this. I'm going to include this wonderful dish for our family 4th of July celebration. Food and videos such as this bind us together both as a family and as a nation. Thank You.

    This salad is older than my mother and I'm seventy years old and it is still great. So good. Lights camera action.

    I was born and raised in California but mom and dad and grandparents all came from Oklahoma. Excellent cooks. Love the sound of the cicadas. Reminds me of my Oklahoma visits.

    In mixing bowl:
    Red Onions
    Cucumbers
    Tomatoes
    Sprinkle Kosher salt and black pepper.
    Marinade:
    Apple Cider Vinegar (or what you have)
    1/2 tsp salt
    1/2 tsp black pepper
    3/4 cup of sugar
    2 Tbsp of EVO
    Sit covered in the fridge for at least 30 mins to let the flavors marinate.
    When ready to serve add parsley.
    This so SO GOOD! Glad I found it and you!!! :)

      @@judithjanes5738 personally I love vinegar. I add at least one teaspoon...Once you do a taste test you will know if you need to add a little more...or not😋

    This is a excellent salad. Especially if you grow your own cucumbers & tomatoes and onions in your garden, oh so fresh. I've been making this salad for years now and it's the BEST! Someone must of gave me her recipe years ago because it's the same one I make except I don't put the parsley in mine. Thank you & God bless.

    My version of this yummy salad also has chopped celery hearts & when I can get them, I also add sugar snap peas. I don't put sugar or salt in the dressing, let people add their own salt if they want. I always use extra virgin olive oil too, much healthier!

    Nice recipe. I've been planning to make this recently. Love the red onions. I would use olive oil, rice vinegar and cracked pepper. I would use way less sugar and salt. I like the pickling cucumbers. Nothing really different. Looking forward to making. Thanks for a super video.

    I put mine in wide-mouth mason jars and just flip the jar now and then to keep it all marinaded. This is so delicious.

    My favorite local restaurant had a cucumber salad (may be similar to this one) that I would go ga ga for every time we went there. Sadly, the pandemic made them go out of business, and now I miss their cucumber salad. I'm going to give this a try. Looks so yummy! I could probably eat that entire bowl by myself.

      I am subscribed. I did something different. I used Japanese rice vinegar instead of apple cider vinegar and also used Vadalia onions. Turned out delicious. One family voted for the rice vinegar and one voted for apple cider vinegar. What is great about this recipe is that it is easy to make your own.

    This was informative! I had no idea about the difference in the cucumbers. I always use English because they are crisper. Now I know why I'm drawn to them.

    My husband does this veggie salad! We used alot of our tomatoes 🍅, cucumbers 🥒 & purple 🧅 onions for a fresh veggie salad. He likes to do it a pickling recipe. It's not my favorite but he enjoys it during the summer. We made a big bowl like this too. I finally had to throw away the leftovers bc it started to smell very strong. Almost like it was alcohol..We won't make that mistake again..😂😂..It's only good for a few days..

    Wish my teeth allowed me to eat something like this. Might try it shredded though. Will still have to peel the cucumbers. Chickens love them. :)

    Question:
    After soaking onions in salt water...do you rinse before adding to bowl....or just drain and add as is?

    I use rice vinegar as it has a milder flavor and is not quite so tart. Also I often use no oil at all as it is not necessary! YUM!

    That looks really good. I don’t know how kosher salt can be any different to regular salt. I think she should have chopped the onions into chunky pieces.

    Use good seasons Italian dressing mix so simple and the Italian spices are so tasty that's all you need. Why go through all the mixing, cover and refrigerate stir once in a while.

    Need more cucumbers cut up to even out ratio of tomatoes. Cut down on vinegar and sugar to Tablespoons. This is a perfect salad for summertime. Best if left overnight in fridge. I use Thousand Island Dressing!

    Looks like the Forestry Department has marked those trees next to you to be cut. You better hurry! (-: The salad. A piece of cornbread or garlic bread and a glass of sweet iced tea. That's a meal.

    I tried to tell my mom that's up there in age. She could spray these fruit fly's with a furniture polish. It's a waxed-based product. That way there wings are weighted down like when airplanes get ice on their wing's.

    I created a cucumber/tomato salad that is much simpler and healthier than this one. I slice an English cucumber then halve or quarter the slices, and add them to my bowl. Then I cut up Roma tomatoes or garden tomatoes (whatever is available, but Roma are easier to slice and get the right quantity balance). Then I slice a red onion thinly, and quarter only a few of the slices to add to the salad. After that I add freshly ground sea salt, freshly ground black pepper, usually some granulated garlic, and perhaps another spice or herb, such as fresh or dried parsley or basil. Then I mix a dressing of about 1/3 good quality vinegar and 2/3 extra virgin olive oil and mix it into the salad thoroughly. It does taste better if refrigerated for about 30 minutes before serving.
