Cucumber, Tomato and Feta Salad

- This cucumber, tomato, and feta salad is everything easy and bright about summer but has ingredients versatile enough to use year round. Make a big batch for snacking, sending in lunches, or for your next get together.
Remember every ingredient matters here because each one shines in its own way. Use the best you can find. Make sure to put the cherry tomato slicing hack to use too! Genius!
Swap the onions: Use shallot, or green onion tops.
Leave out the olives if you want to.

Ingredients
2 medium cucumbers seeds removed OR 1 large seedless cucumber sliced into 1 inch pieces
3 Roma tomatoes OR 3/4 cup cherry tomatoes diced into 1 inch pieces
1/3 cup red onion finely diced
8 Kalamata olives sliced
3/4 cup crumbled Feta cheese
1/4 cup olive oil
3 tablespoons fresh lemon juice
1/2 teaspoon dried oregano
1/4 teaspoon each salt and pepper Хобби

I love this salad!! I will also add green pepper as we love peppers and when I serve it i put a small handful of home made croutons on to of each individual’s plate/bowl. Thank you for this recipe. Can’t wait to try it with lemon. I always used red wine vinegar and i know I’ll like this better with fresh lemon!!
