    Ingredients
    1.Boiled Taro with Coconut Cream / Faalifu Talo
    • Raw taro
    • Coconut Cream
    • 1 tbs Salt
    • 4 Litres Boiling Water

    A Healthy Chicken Chop Suey Recipe
    A must have meal in any Samoan function. Chicken and Vegetable Chop Suey with any meat of your preference. With so much flavoring from garlic, ginger and onions as the main flavoring along with other condiments.
    Ingredients
    1-2kg of chopped chicken thigh fillets or any meat of your choice.
    1-2 packets of vermicelli noodles.
    8-10 cloves of minced garlic
    1/4 cup of olive oil
    2-3 Tablespoons of minced ginger
    1/4-1/2 cup of dark soy sauce
    1/4 cup of light soy sauce
    1/4 cup of oyster sauce
    Salt and Pepper to season
    2 litres or more of Chicken Liquid Stock. (Homemade or from the shop)
    Optional
    Fine chopped vegetables of your choice
    Eg: white cabbage, carrots, green cabbage
    Method
    1. Heat olive oil in the pan until it's hot enough.
    2. Add half of minced garlic and stir for few minutes
    3. Add chicken, onions and ginger and cook until the chicken is ready
    4. Add oyster sauce, dark & light soy sauce
    5. Wash vermicelli noodles and add to the pot
    6. Add chicken liquid stock
    7. Bring to boil and cut the noodles a bit shorter
    8. Keep adding soy sauce if needed.
    9. Season with salt and pepper.
    10. Turn the oven off and add the veggies and stir through.
    Homemade Chicken Stock/Broth Recipe
    Ingredients
    • chicken bones
    • 1-2 large onions
    • 2 bay leaves
    • 3-4 stalks spring onions
    • 1 tbs black peppercorns
    • 4 thick slices of fresh ginger
    • 3 garlic cloves
    • 2-3 litres of water
    • 2 cubes of chicken stock/powder
    Steps
    1. Wash chicken bones well
    2. Add all the ingredients in a large stock pot
    3. Boil and simmer for one to two hours
    4. Drain stock and use for cooking
    5. Cool leftover stock completely and store in the freezer for up to a month for other recipes.
    6. When ready to use thaw the stock and use again

    I just had a go at making the chop suey and added cabbage, I saved the chicken bones to try making fresh stock for next time. I also made the taro but, I had pealed frozen ones so it was easier but, I'll try making it from scratch one day. Thank you for the tutorial!

I agree with you sometimes i get the frozen taro because the fresh ones might be unavailable or expensive but frozen ones are always there and a little cheaper. Appreciate your feedback again.
