- How To Make A Chicken Curry Without Tomatoes & Yogurt - Chicken Curry Recipe Indian Style

This is a Bihari inspired chicken curry recipe. Bihar is a state in east of India. Usually whole heads of garlic are used along with crushed garlic, I chose only to use crushed garlic, but if you are a garluc lover you can add one who head of garlic(unpeeled) along with the chicken and potatoes.
Ingredients - Serves 6 to 7
* 1.5 kg bone in chicken (with or without skin)
* 650 gm / 5 medium to large onions
* 76 gm/ 1 whole head of garlic
* 35 gm ginger
* 1 green chilli (can use more or leave it out)
* 5 green cardamoms
* 4 to 5 cloves
* 2 inch length cinnamon stick
* 1 black cardamom (optional)
* 1 dry bayleaf
* 1 dry red chilli (optional)
* 1 teaspoon cumin seeds (jeera)
* 2 teaspoons turmeric powder
* 1 tablespoon Kashmiri chilli powder. Please use less to start with. You can always add later at the end. You can also replace chilli powder with sweet paprika or use a combination of chilli powder and paprika to get that red color
* 1 tablespoon ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1 teaspoon garam masala powder
* 2 cups hot water or as required
* 2 & 1/2 teaspoons salt or as per taste
* juice of half a lemon/lime
* chopped coriander leaves
* 6 tablespoons oil. Please adjust proportion according to your preference
Method -
* Apply turmeric powder, salt, lemon juice to chicken
* crush ginger garlic green chillies
* heat oil over medium high heat
* add the chicken and fry. take them out once they turn into creams brown color
* add potatoes and fry them till they get slight brown edges. take them out into a bowl
* add cardamoms, cloves, cinnamon stick, dry bay leaf, cumin seeds to oil
* add the onions and fry on medium high heat for about 5 mins
* lower heat to medium, cover pan
* Uncover frequently, give a stir and allow the onions to reach a light brown color
* add the crushed ginger and garlic and fry for a few mins
* lower heat to low and add turmeric powder, chilli powder, coriander and cumin powder along with a splash of water.fry for a few mins
* add the chicken and potatoes and fry with the masala
* cover on medium heat for 5 mins
* uncover and add garam masala powder along with hot water
* cover on low heat for 20 mins or till the chicken and potatoes turn tender
* garnish with coriander leaves
* serve this with rice/roti/naan/paratha

I loved this. I have my grandmother's recipe books which contains recipes from their Tamil cooks when they lived in Burma (my mother was brought up there). They ate Indian Curries most lunchtimes. But they were frequently cooked without tomatoes or yogurt. When I was young, my mother's thick gravy around the curry was mostly from the slow cooked onions (sometimes pureed onions), but sometimes lentils or garam flour. Although I love the taste of adding tomatoes, a curry without brings back the taste of my childhood. Thank you for reminding me.
PS: My mother used to cook a variation of mulligatawny soup but with large pieces of chicken, preferably from an older bird. She would set it to cook very slowly while we went out, and we would eat it when we returned - big bowls of the soup and chunks of fall apart chicken on the bone.

Made this curry tonight with boneless thighs (the only kind of chicken I had) and ghee. The gravy would have been even better with bone-in meat but I still loved this dish! Lovely taste of the spices and the natural sweetness from the onions. My partner had his with some cream but I didn't think it was needed. Thank you for this amazing recipe.

As much as i love tomatoes in my curries and yoghurtas well, i can definitely live without as you've put my favourite vegetable ( the wonderful potato) which makes everything better. Thank you Bumbi for this lovely straight forward recipe. Im making this at the weekend.x

As I wrote in the description box that black cardamom is optional. Though it brings in a smoky flavor but please don’t worry much if you do not have it in your pantry.

Me too i dont like it too heavy... sometimes i add almonds ground uo which thickens and makes a little creamy.

Thanks for diving into the recipe so quick. Since you are using chicken breast please keep in mind that chicken breast gets overcooked very easily so the cooking time will be far less. Overcooked chicken breast will become rubbery and fibrous

I FINALLY found a grocery where they sell a wide variety of bulk spices, most organic, and super affordable, I can get as little or as much as I want, and most for just one or two ounces were anywhere from 50 cents to 2 dollars -- depending on the spice! I can also use my EBT food stamps on them, which is fancy! Stocked up on cayenne, cumin seeds, coriander seeds, cloves, black mustard seeds, fennel, cinnamon sticks, cardamom pods, and a lot of other spices and herbs they had. Now I just have to go and buy some fresh ginger, bay leaves and chicken so that I can make this today. Do you think this would work with firm tofu as well? I don't eat much meat these days, I have no craving for it anymore for some reason. Going to try it with the chicken first though. I'm going to use the spices I bought to make a new garam masala as well. I still have plenty of turmeric as I stocked up a couple of months ago as I use it as an anti-inflammatory so that I don't have to take medications as well (and it works great!). Thanks for this recipe and I'm excited to try it as soon as I can!
I am glad to hear that you found a store selling spices at a reasonable price. Spices last in airtight jars for ages if kept in dark dry place. Moisture is their enemy. I bought some star anise God knows when and they still smell the same. I have a whole playlist on tofu -

@@CurriesWithBumbi I bought some little 2.3 ounce containers with lids at the Dollar Tree Tuesday for each spice as well for exactly that reason -- to preserve it longer. I also didn't want the spices to attract any bugs. Took forever to clean all the little jars and lids and then make labels for them all. There were nearly 30 spices I'd bought! Some were herbal teas, and things like marshmallow root, slippery elm bark, and licorice root so that I can make remedies when sick. Thanks for the link for the tofu recipes! I definitely am excited to make this chicken recipe though tonight because I really want some chicken curry! Its 3:30 AM and I'm craving food, lol. Thanks!
Thats awesome i wish they did that here. Usually it is small bottles of grouns soice which taste very little or huge bags for resteraunts of whole spice. When my family buys a packet we share it around to everyone because no way we would eat a whole kilo of cardamon in even two or three years! 😂
I call Kashmiri chilis "pleasant!" Like Goldilocks, I want things "just right." That is Kashmiri chilis! Rather like mild Serranos.

I have tried a lot of your recipes and they have turned out great, Not this one. The chicken marinade of salt, lemon juice and turmeric and then shallow frying the chicken to brown it made the turmeric coating bitter and unpleasant to eat
Oh no !! Sorry about that. Hope you used the same proportion as mine?
@@CurriesWithBumbi Hmm. Maybe there was only around 1kg in chicken pieces so possibly too much liquid marinade relative to the chicken causing it to take much longer to brown the chicken and hence overcook the turmeric coating. Anyway will try another recipe. Keep up the great work with the videos
Next time please do not add the marinade. Fry the chicken on medium heat and it shouldn’t brown up
