French Rolls in the Bread Machine

  • This easy recipe for French rolls is great for beginners. There are only four ingredients, and the bread machine does all the work for you.
    Instructions below includes tips for those without a bread machine
    Ingredients:
    -1 1/3 to 1 1/2 cups of water
    -4 cups bread flour
    -2 teaspoons salt
    -2/5 teaspoons yeast
    Directions:
    1. Add all ingredients to your bread machine or stand mixer. Only add 1 and 1/3 cups of water. If using a bread machine, start dough on dough cycle.
    2. As mixture starts to come together, if it seems overly dry, add the remaining amount of water. Allow to knead for 3-5 minutes before reevaluating. If it still seems dry, add more water a tiny amount at a time.
    3. Allow to knead in bread machine until cycle is complete. If using stand mixer, knead for 10 minutes using dough hook on low setting. Allow machine to take a short break halfway through.
    4. Bread machine will allow dough to rise. If using stand mixer, transfer dough to an oiled bowl and cover with greased plastic wrap or a clean, damp towel. Place bowl in warm area for 1 hour, or until doubled in bulk.
    5. Divide dough into 10 roughly equal pieces. Prepare baking sheet with parchment paper and dust with cornmeal. Shape dough into balls and place on baking sheet. Rub the tops with flour
    6. Preheat oven to 450 with racks in center and lower position. Place empty baking sheet on lower rack.
    7. Cover dough with greased plastic wrap and allow to proof for 45 minutes, until puffy.
    8. Pour 1 cup of water into hot empty baking sheet in oven. Immediately uncover rolls and place into preheated oven.
    9. Bake for 15 minutes and cool on wire rack.
    To freeze: Allow to cool to room temperature and place in plastic bag. To defrost, put in microwave on DEFROST setting for 1 minute each.

    Is the cycle the same, for French bread at all machines? After mixing and kneading, how long for raising? 60' ?

    These are wonderful, my first successful attempt at french rolls. One question: after one day they seemed to deflate into something more akin to hamburger rolls. Is this normal? Did I do something to cause this?

    Hello, I love bread, I love your video. I got my bread machine for mother's day . I made French bread, but I don't like the shape and the bread. I notice that after the machine does it job, you still let the rolls to rise 45 min. more. Do I have to do this for all the recipes? Thank you.

      hi isabel! yes. after the machine makes the dough, you will need to shape and then let it rise again. 😊.
