Lemon Chicken
1.5 lbs chicken breast, cut into strips
salt and pepper
3 lemons
1.5 cups flour
2 cups chicken broth
cooked rice
Season chicken with salt, pepper, and zest of 2 lemons. Dredge in flour. Saute in skillet with butter/oil until brown. Add chicken broth. Simmer on medium low for 15ish minutes until chicken is tender. Adjust seasoning of sauce. You may add a tsp of sugar if the sauce is too tart. Serve with rice.

take out the cucumbers from the bag. roll them with paper towels. if they are minis, i can fit 3 cukes in a half sheet of paper towel. make sure they are separated by the paper and not touching each other. store them in a glass container in the fridge. they will last more than a week. or you can put them back in their original bag after wrapping them in the paper.

Love seeing the variety in the haul. Walmart really does carry quite an array of products and even though their prices have increased over the years, they're still cheaper than other major supermarkets and even Target. Their utility really can't be understated.

I believe the lemon chicken recipe you make is called Chicken Piccata. It's an old recipe that's been around for a long time. I make it often and it's my favorite chicken recipe. There are several chicken piccata recipes with different ingredients. My recipe is very similar to yours. I use about 2 lbs. chicken breasts cut into strips. I use a meat mallet and pound them until they are thinner. I put flour, salt and pepper in a bowl and dip the chicken pieces in the flour until they are coated. Heat 1 TB. oil and 1 TB. butter in a skillet over medium heat. Brown the chicken pieces for 3 minutes on the first side, then turn and brown the other side for 3 minutes. It doesn't take long because the chicken pieces are thinner. Repeat with the rest of the chicken, adding additional oil and butter as needed. Transfer chicken on a plate and cover with aluminum foil. Mix 1/4 cup lemon juice and 3/4 cup chicken broth and pour into skillet, scraping up any brown pieces of chicken. (I like a lot of the lemon sauce, so I always double the amount). Bring to a boil, stirring occasionally, until thickened, about 5 minutes. If you want a thicker sauce, more like a gravy, add a slurry of flour and water and add to the mixture. Then you add the chicken pieces back into the sauce. I love to serve this over rice. It has a nice lemony flavor. I don't always have fresh lemons, so I use bottled lemon juice.

Thanx Jen. For my baby cucumbers I take out of bag and let them sit on counter to dry. (They are always wet). Then after I wash off, dry, cut up and store with paper towel in air tight container.

Yup ….I buy 2 conditioners for every 1 bottle of shampoo….I’ve always had to do that 😂. I love Pringles chips so I bought the mingles and I wasn’t impressed 😬 they really didn’t have much flavour in my opinion but maybe your kids will like them 😊

Your dinner looks delicious! We always do Lawry's (has to be Lawry's) lemon and pepper seasoning on chicken breast and grill them - splash of lemon at the end! Out of this world good!

When I see high priced good foods like raspberries, I just think well I’m buying less “ junk” or processed foods in place. Like you, I’m on a semiglutide (Wegovy) so I justify the price of good food. I’m going to try that lemon chicken…looks delicious!

When I buy produce at Walmart it does last as long my local grocery store. It could be just coincidence, but after a few days it’s yucky. Especially those little cucumbers.

and to talk about your GLP one journey I have PCOS and have struggled to lose weight to my entire adult.
