I like these because they’re a more sustainable way of budget eating than all of the “extreme emergency budget” videos. I know creators make those because they get lots of views, and they really can be very useful. But I also really want what you have called (in previous videos) “budget-ish” plans. I need to watch the budget, and I work very hard at that, but I also don’t want or need to go so rock-bottom low budget that I’m eating unbalanced emergency calories or having to make literally everything from scratch. At least partially homemade and mostly balanced nutritionally is where I want to focus, so the burrito bowls and chicken gyros in particular are ideas that work for me. Sometimes I use a shortcut if I can afford to, and sometimes I make it all myself, and sometimes I substitute with things I have onhand, but a manageable plan is flexible. Everybody’s needs and priorities and constraints and definitions are different, so I know it can be tough to thread that needle content-wise! But I like this type of video. Thanks!

I am mostly vegan to regulate my hormones, but my family isn't, so I am definitely going to try the burrito bowl with the pico, as it is something we can all enjoy. I recently tried the Siete spicy salsa when I got an Ibotta rebate and that is really flavorful, also. I would love to get the reviews your kids give on your meals. Mine are so picky it is really hard!

A rice cooker is such a great investment for budget, busy, and/or single portion cooking! You don’t need anything fancy or expensive. I got mine for about $15 at Walmart a few years back. While you cook rice you can also add in frozen veggies and seasonings and it will all cook together really well.

Just wanted to mention that I have the same storage containers that you use. The one cup, two cup and three cup cotainers. Got them on Amazon. Love that they stack in the fridge and take up a lot less space than most containers.
I never throw away “scraps” like ends of cilantro. They go in a gallon freezer bag until it gets filled and then I fill up a huge pot of water and make homemade stock with it. I don’t waste anything like that
"find recipe" for baking rice? YOU HAVE THE BEST RECIPE FOR THAT!!!! Omg I use it *so* much, I have it memorized. My sister, who hates rice, loves it! It's the only rice she'll eat. And I know people say that as an exaggeration, but she hates rice. And she'll only eat yours and the rice from one specific restaurant *with* a specific meal. This rice, she'll eat with any meal. Also, omg thank you for telling me how to get the tendon out. I hate fighting with it, and I hate cutting the thing up when I want an actual tender. And yes, it is wasteful trying to trim it out with a knife. I hate that so much, considering how much groceries cost.
Oh and one more thing I wanted to mention. I live in Michigan and I really dislike the tomatoes we have access to in winter so I also buy the Romas. I wanted to tell you what I have recently done to make them taste more fresh. I made a Panzanella salad and after I offered to make it for a family gathering I regretted it because it’s winter and the salad is mostly tomatoes! But I cut them up in bigger chunks than you cut yours in the video, placed them in a strainer over a bowl to catch the drippings, then salted the tomatoes well. I let them sit for 15-20minutes before adding them to the rest of my salad and it made them delicious! And bonus…I poured the tomatoe “juice” drippings into the salad dressing I made for added flavor!
A trick I have been using for keeping my salad greens crisp and green longer, I store them in my salad spinner in the fridge! I wash and spin them as usual but then just put the lid on it and put it in the fridge. I've kept iceburg lettuce fresh and green for up to two weeks with this method! It does take up a good bit of space in the fridge and if you wash lots of produce you may need a second spinner, but, it's been worth it for me!
I immediately added that gyro spice packet to my grocery order for this week. Looked so, so good! Also, congrats to your Chiefs but I am soooo sad about my Buffalo Bills 😭😭💙❤️
Oh you did it again! I love this video and the very well organized way you put things together. The broccoli rice casserole is something I’ve made before but used Cheese Wiz (which you mentioned) instead of grated cheese. I have put that on my meal plan for next week, so thanks for that reminder! Also, the Greek seasoning packet that you bought was a two-fer! Genius! We always make cilantro lime rice, and the recipe I use, adds some olive oil and fresh squeezed lime juice to the hot cooked rice along with the cilantro and lime zest, it’s so good!

My go to emergency meal is pasta with basil pesto. If I feel fancy I add some chicken and peas. Mind you pesto has gone up quite significantly but Aldi has really good pesto at about half the price of other stores

I love my rice cooker. It's one of my favorite kitchen small appliances....right up there with an electric mixer. So handy. It makes perfect rice every single time. Jen, you got me started eating cilantro and now I can't get enough! I'm using it all the time. I had no idea it was so good. The first couple of times I ate it it tasted soapy, but the third time I ate it it didn't taste soapy. It tasted fantastic! I love it! It really makes the dish taste fresh and authentic. Do you have a recipe for DIY taco seasoning? I'd like to make my own but I don't have a recipe that someone else could recommend for me. I like to cut my pitas in half, open up the pocket and fill it full of goodness. Yummy!

@Jen-Chapin I've never seen that price at Walmart or Aldi, but it's common at Food Lion. The Eastern Shore of Delaware, Maryland, and Virginia are filled with chicken growers and processing plants. When grocery stores source locally, they ( and ultimately we) aren't paying to ship long distances. I am currently making a big batch of Chicken Queso soup in my slow cooker with 3 pounds of boneless, skinless chicken breasts, which cost me $6. Where I live, Walmart and Aldi are not the budget option.
It's cheaper to make your own taco seasoning with the spices you have. Don't buy can beans use dry beans, use what you need and freeze the rest for another day.
I don't like any of Walmart's chicken. I get tenderloins at Aldi. Theirs have flavor and are good chicken. Great meal ideas though. I would say to people I think one can still make most meals for $10 IF they are soups or casseroles, etc. It is when you try to feed every family member one or two full pieces of meat that ups the price but if the protein is spread throughout the meal, I think most can be made for $10 if not a soup or casserole with fancy ingredients or convenience ingredients. I'm talking for at least a family of four, a person can do it for even less if a smaller family. I am sure you could have come up with 1,000 ideas and not just these three. Lunch and breakfast are by nature cheaper than dinner and honestly peanut butter and eggs are still cheap proteins. Even with the price of eggs you can make a lot of things and still be under a fairly low price. I made a ton of egg salad I ate on just this entire last week. I usually had a bowl of soup with a sandwich or a few chips. Sausage and biscuits, peanut butter and jelly, even grilled cheese, all still very affordable. Tons of things are. Personally I think one can feed a family of four all three meals for seven days at $100,.00 and not be limited in options and if one shops the deals rather than makes a menu plan and then having to buy certain ingredients at whatever price they are, it can be done still. If one thinks $100 is too low, then do $150.00 and you will have even more options AND that's still a very affordable price for a family of four. If one gardens also, one can really save if they freeze or can and for sure through the summer with fresh veg. One has to watch it though, I have seen some YTers garden and no way do they do it economically by the time they buy all they think they need at high prices. Starting your own plants from seed is a key one that saves a ton of money. Anyhow, great video.
Hi Jen. Chicken curry is one my families favorites. Last night I made a big batch, but when I added the coconut milk the smell was awful. The can was NOT expired, but somehow the milk had soured and I didn't realize until it was to late. The contents looked normal, not discolored and it didn't really smell bad until I added it to the chicken. We had to throw out the whole dinner. I was so upset! Has anyone else had this happen with canned coconut milk?
Seems like so little chicken for 4 burrito bowls. I would most likely add more chicken. Otherwise that looked excellent. I love making burrito/taco bowls. So easy to prep and then so easy to finish making at night.
Jen..there are lots and lots of us out here who just cannot afford those pricey things you have delivered. We love your channel and You but all this is just not what we can afford. I cook from scratch daily. Im retired and my 46 yr old son lives with me for now. I could really use some recipes for us and single people such as Cooking for 2. I made vegetable Soup with Cornbread tonight and Lasagna for 2 last night. Had fried fish, slaw, hushpuppies early on the week. We eat good but could use ideas too! Go Chiefs!!!

I have a bowl for vegetable and fruit trimmings. Then put in my compost.
I had sliced up some kielbasa and diced potatoes and onions and had enough for three meals
Hi Jen. Chicken curry is one my families favorites. Last night I made a big batch, but when I added the coconut milk the smell was awful. The can was NOT expired, but somehow the milk had soured and I didn't realize until it was to late. The contents looked normal, not discolored and it didn't really smell bad until I added it to the chicken. We had to throw out the whole dinner. I was so upset! Has anyone else had this happen with canned coconut milk?

Seems like so little chicken for 4 burrito bowls. I would most likely add more chicken. Otherwise that looked excellent. I love making burrito/taco bowls. So easy to prep and then so easy to finish making at night.

Jen..there are lots and lots of us out here who just cannot afford those pricey things you have delivered. We love your channel and You but all this is just not what we can afford. I cook from scratch daily. Im retired and my 46 yr old son lives with me for now. I could really use some recipes for us and single people such as Cooking for 2. I made vegetable Soup with Cornbread tonight and Lasagna for 2 last night. Had fried fish, slaw, hushpuppies early on the week. We eat good but could use ideas too! Go Chiefs!!!

The meals Jen has delivered do suit some people's budget but not others. Just don't😊 order them. I don't, but I really like Jen's content.
