I, too, appreciated this. I might not have been able to finish the video if it wasn't there, I'm glad I was able to stick around to see the end tower. The one on the top triumphantly waving a sprig of parsley is my favourite.

The little crayfish triumphantly holding the herbs at the top of the crayfish cadaver tower truly pulls the whole thing together

I audibly gasped when one of the Crayfish fell from the tower, but not as loudly as when Sarah said the fish guy didn't charge her.
Loren Adiutori Fish heads and offcuts are often thrown out, and so if you ask for some, fishmongers will often give you them for free as they'd otherwise go to waste!
I love how salty Sarah is about not having the fish bones :D

Great job on the Crayfish tower!!!as a Chef I make chocolate strawberry towers for banquets alot,usually I'll use kale to cover the foam cone.then put toothpicks in the foam and puncture the chocolate covered strawberries with the toothpick on the one side so they're hanging...Ill have to order Dalis cookbook...classic 70s nouvelle cuisine.👍Thanks for sharing.

I think it is so funny that you had to special order the crawfish. Down here in Texas, they are at every grocery store. But, did you actually eat this?
Yes of course! I love crawfish. We ate some on site, but then I pulled the tail meat and made a kind of etoufee to serve over rice. Do you eat them regularly?
In restaurants mostly. As you know they are labor intensive to eat or cook with. So, yummy but I usually eat them about two times a season.
I'm somewhat close to the coast in the capitol of Oregon (Not Portland... Eugene ain't it either...).
There's two buffets in town that keep crawfish all year round usually, but other than that no one ever has anything like it except the super rare single night crab leg buffet night. Where ya won't get any cause someone just walked off with the whole tray the second it was set down.
So I can imagine how extraordinarily rare these things must be away from the coastal states...
*PSA: Onions, garlic, and leeks are poisonous to dogs.* While you may not have given your dog the flesh of the vegetables, the chemicals from them were cooked in the broth with the fish, and therefore were in the fish you gave to your dog. I understand trying to use the entire part of an animal when cooking, but in this instance, that could be a dangerous decision.
There are some people who feel that small amounts of these things produce no ill effects, so it's really up to you as the owner to decide what's safe for your pet, but I just want you to know in case you didn't.
Sarah, I'm a massive fan of both you and John (and Hank), but I really struggled to enjoy this video.
By announcing that "your feelings of guilt lifted" after you arranged several hundred carcasses in a fancy display, you carelessly toss away your ethical intuition of boiling living creatures.
The history and art pieces of this video are great, but the blatant neglect to address environmental repercussions of such consumption practices are a disservice to your fan base.
I've seen Hank's video about vegans and vegetarians, but I still struggle to comprehend how such an incredibly intelligent family promoting education and positivity in the world could continue to support industries killing animals by the billions. I am rarely that preachy vegan, but I was prompted to write this after hearing your acknowledgement that you feel sorry for what you did and seek repentance for your "sins". Perhaps this comment could encourage an investigation of the disconnect from your conscious and actions in this regard.
Again, I absolutely adore you all and think the work you produce is enriching, educational, and beneficial to the masses. I wouldn't have written this if I didn't think you were capable and receptive of such feedback.

Did you get your vegan powers yet, or was this like the preliminary RUclips comment for the application?
Cmon man, you gotta see this is an example of food as art and that not everyone has to live up to your personal vegan standards just because it makes you uncomfortable.
Do you want them to make historically accurate representations of food.. or screw up the entire concept of the videos on what these artists ate at the time by having "Vegan Van Gogh".
They even had a warning at the beginning of the video that you clearly ignored if boiling live crawfish would get you upset. What's next? You post the same thing because they decided to bake a chicken?
Which is more horrifying? This or the meat phallus?
Come to Louisiana and we gonna show yall how CRAWfish (lol) is really cooked.. spice, more spice, salt, garlic, onions, potatoes, corn, sausage, lemon and cooked live in a big pot of rolling boiling water with all ingredients above. Strain when deep red.. dump on a table covered in newspaper or plastic.. and eat.
(Optional ingredients.. oranges, pineapples and one time I seen celery) ENJOY!

1) The array of antennae (or whatever those were) over the lemon/tomato at the pinnacle.

Really nice collection of photos and quotes from a multifaceted personality, who manipulated media attention to his benefit like an early Warhol (well, maybe).
I did feel an eyebrow raise in doubt at the assertion (in passing) that Tristan Tzara founded Dada, but I'll just suggest reading the entertaining and baffling history of Dada called Destruction Was My Beatrice. Only because that book made it hard for me believe that Dada had a coherent birth-life-death narrative that jibes at all with the facts.
could you do an art cooking with van Gogh?

Yuji de Torres I imagine a lot of that was to keep from repeating other videos. (See: cited video on the movement, previous art cooking on futurists, the case for series). Which is definitely my preference. There’s nothing skirting around about that to me.
hmmm good point but i do think we need to hold our "canons" of artists accountable for their political choices and they shouldve put in the reason why dali was kicked out of the surrealist group rather than just mentioning it. and fascism and political choices are very relevant topics in this political climate.
She mentioned it when she said Dali was against liberté which comes at no surprise as he stole one of its greatest influencers wife, Paul Éluard

The crawfish was supposed to be washed in a large basin of salt water! You forgot to clean them!

I have enjoyed the journey that this channel has taken and I can't understand why more people don't watch these videos.
My goal for 2018 is to introduce this channel to all my friends.
I enjoy these videos but it concerns me that the food not being consumed. I hope all the food is eaten because it would be a real tragedy to use animals (whether crayfish or meat, like in the bone meal episode) and let their deaths be in vain by not eating them. I worry a lot about food insecurity and sustainability, so I want to make sure this food is feeding people and not just a show.

Lets think about animals for a sec
Having grown up in Louisiana, it's kind of neat to see one of my favorite, most nostalgia-rich foods, which, as you mention, are usually just piled atop newspaper, elevated like this. The critique of greed and opulence is valid, but, in the case of food, I think that opulence can become egalitarian. Cajun crawfish is a product of a socioeconomically disadvantaged culinary tradition, but, by paying such careful attention to common ingredients, they are transformed into something sublime, maybe elevating every backyard crawfish boil a little bit in the process. I think that the recent(ish) trend of bringing what Tony Bourdain calls "the nasty bits" and unloved cuts of food back into fine dining operates along the same lines, giving overlooked cuisines Michelin stars and the respect they deserve (hopefully not in an appropriative/exploitative way)...
This is so beautiful, I think it beats the meat sculpture lol

I quite liked reading the comments before watching the video, then slowly unraveling what they meant by crayfish tower and crayfish unboxing.

Personally I have a very bad opinion on Salvador. He betrayed the conceptualism around the Dada movement and anti-consumerism, and turned it into surrealism. Art that was once rejected for exhibition, is suddenly allowed based on popularity of the creator (also what Dada fought against). This went against Duchamp's philosophy and turned surrealist, abstract works of art into a popular form of art. You could essentially call surrealism "Dadaism that forgot itself".

I was thinking that your tower of shrimp might be easier to construct if you stuck toothpicks strategically along the length/height of the tower so the shrimp would have something to grasp onto.
I live in Montana and there is a lake nearby where wild crayfish roam/scuttle. They’re quite delicious.

Putting the Crawfish in the freezer for a bit and then putting a knife through their heads before boiling them keeps them from feeling pain

What I love about the Art Cooking series is the the line that always comes: the artist and their s.o. were know for their dinner parties. It reminds that all artists crave community. It reminds me of my college days and cooking with my two friend. Me like a little Italian Granny painting a Pollock, one friend who cooks like a mathematician painting a classic masterpiece and our third trying to balance us out. As the tiny loft apartment filled with our friends. A sea of people, all in the arts, who were sitting wherever they could even picnic style on the floor. The laughs we share, the sense of home-- it's something that can be replaced.
FINALLY!!! An English speaking person that pronounced his surname correctly and says dah-LEE instead of DAH-lee. Thank you! :) PS. And in case some doesn't know, his first name is pronounced sal-vah-DOOR not SAL-vah-door.
It’s crawfish god damn it
I actually made this for a Mardis Gras dinner a year ago after getting Dali's cookbook for Christmas. Bompas & Parr actually recommend a plywood pyramid and a staple gun to attach the crawfish (which I did. . . . ). Everybody was wild for it.

Food seems gimmicky and also unappetizing --can't make myself watch these. LOVE the regular ones (to Marfa, to LA, the case for X, etc.); they are a revelation.
I cannot believe I didn't know about this channel until now, I love art. It is fitting that this is the first video I see though since Dali is my favourite artist.
