if you can get Shell cordovan, go with that. it's the king of leathers as far as most are concerned. it comes from a very small spot on a horses rump. it's very expensive, but since you don't need much to make a watch strap, it is what you should go with. Just my two cents.
Both patina beautifully. The Dublin is superb in that way. The CXL does better than you would expect because although it's initially Chromium tanned, it has a veg retan. Also any leather that is infused with all of the oils and emollients and finished with wax, will tend to patina nicely.
Both Dublin and CXL darken and patina beautifully. Essex is the precursor to Dublin. Dublin is made by taking Essex and adding a lot of wax. This does two things that we like. First it gives the finish much more protection and resistance. Second, it makes the leather noticeably firmer as compared to Essex, which is a little soft for the kind of items we make. Derby is just Dublin tumbled in a drum to break the fibers and bring out the pull-up undertones. We often "hand tumble" Dublin for the same effect.
They are both quite strong, but Dublin is a little firmer and tougher as it is a veg tan leather. Also, no full-grain high quality leather is really ever scratch proof, but Dublin is a little easier to rub out light scratches and deeper ones better blend in to it's rustic look. Both leathers look good when aged and distressed as real leather should. Hope that helps.

Dublin ages fabulously. It's one of my all time favorite leathers to work with and because of how it patinas over time.
