You are doing it all backwards lol. So much easier, and a better/neater finish, if you did the plywood and final floor finish BEFORE the toilet/basins/freestanding bath are in place...... since you are using expanding foam in all the little gaps around the floor I think you will be finishing it off with a resin type floor finish....

Not recommended! Gets wet it is mush. The firmer, less-permeable material you can use, the better. Concrete, sealed with a sealant, 1st choice for a ground-floor if on a slab foundation. Or plywood as he is doing, sealed with a sealer. If water gets around the perimeter of the floor, it will seep up into the wood framing of the walls and ruin them over time. Seal, seal, seal! It's a bathroom - water, water, everywhere, daily. Don't go any lower than plywood, at least 3/4" thick, for the subfloor. Don't use MDF or particle board or OSB board (OSB stands for Oriented Strand Board and it’s formed out of compressed layers of wood strands with adhesives (wax and synthetic resin)).
you should tile the floor first makes your life lot easier and if you reaplace that's toilet connector to a flexible one and the problem resolved lop work looking forward to see the end product .
